How to Cook Salted Hong Kong Red Tilapia

  • Prepare the Ingredients

    You can buy pre-filleted red tilapia at supermarkets or you can buy the whole fish and clean it yourself to fillet.

  • Make HongKong Salt

    You prepare a multifunctional blender, add 1 spoon of roasted dried shrimp and 1 spoon of roasted breadcrumbs into the blender and blend until fine.

    You prepare a pan for the blended dried shrimp and breadcrumbs, then add other seasonings including 1 spoon of crushed peanuts, 1 spoon of crushed fried garlic, 1/2 spoon of seasoning powder, 1 spoon of salt, 1 teaspoon of chili powder, 2 spoons of sugar, 1 teaspoon of pepper, 1 teaspoon of monosodium glutamate.

    Once you have added all the ingredients to the pan, use chopsticks to stir evenly, and roast over low heat for about 5 minutes, until the salt mixture turns golden.

    The cleaned red tilapia fillets should be placed in a bowl, add 1 tablespoon of crispy flour, and mix well to coat the fish evenly with the flour.

    Next, prepare a frying pan with oil, wait for the oil to heat up, then add the floured red tilapia to fry until golden and crispy. Once the fish is fried to a golden crisp, add 8 – 10 basil leaves, a little sliced chili, and some shredded lemongrass to fry together for a fragrant aroma.

    Fry for an additional 3 – 5 minutes, then remove the fish and lemongrass to another pan. Place the pan on the stove over low heat, then add 2 – 3 tablespoons of Hong Kong salt that you have prepared into the pan and stir well on low heat for about 3 minutes until the salt coats the fish evenly, then you can turn off the heat.
