How to choose young, delicious Thai frogs (young frog) to buy
- Delicious young frogs will have a moderate size, green skin, still have stems, and some sap sticking to the skin.
- You should not buy the yellow ripe ones as they will lose their original flavor. Besides, larger fruits are usually older frogs, you should not buy them! Because when eaten, the flesh will be tough, affecting the deliciousness of the jam.
- If buying pre-peeled young frogs, you should buy those that have just been freshly peeled.

How to make chewy mango jam

Prepare the ingredients
First, dissolve 2 tablespoons of salt in 3 liters of water.
Next, wash the green mangoes thoroughly, then let them drain, peel off the skin using a peeler, and place them in the saltwater solution you just made.
Once you have completely peeled all the mangoes, use a food injector to poke evenly around each mango, then remove the mangoes from the saltwater solution and let them drain.
The pineapple you bought should be peeled, washed thoroughly, and then cut into small pieces about 2.5 finger lengths long, then put in a blender and blend until smooth.
Next, pour the blended pineapple mixture into a fine sieve lined with a thin white cloth, then gather the cloth tightly and squeeze firmly to extract the pineapple juice through the sieve, obtaining juice without any pulp and store it in the refrigerator.
Tip: If you don’t have a food injector, you can cut the mango in half so that the sugar will soak in better. -
Marinate with sugar
Put the dried starfruit along with 1.2kg of sugar into a bowl, then mix well and let it soak overnight for about 8 – 10 hours so that the sugar melts and absorbs into the starfruit.

Cook the jam
Put the mixture of starfruit and soaked sugar water into a pan, turn on high heat, wait until the sugar water is hot, then use a spatula to stir twice to heat everything evenly. Wait an additional 3 minutes until the sugar water in the pan boils.
Reduce the heat to medium and cook for about 20 minutes until the sugar water turns a cocoa brown color and becomes slightly thick, then add the pineapple juice stored in the refrigerator.
Mix well and cook until the sugar water thickens, then reduce the heat to low and cook for another 15 minutes until the sugar water becomes syrupy and turns a deep red color, then it’s done.
Note: To prevent the starfruit from breaking while cooking, you should stir it gently. -
Blanching and Drying the Jam
Place a pot on the stove, add 1 liter of water and 1 tablespoon of salt, mix well and cook on low heat until the water in the pot is warm, then use a slotted spoon to scoop the candied green mango into the salted water.
Blanch it evenly for about 1 minute so that the sugar syrup clinging to the green mango washes away, then take the green mango out and spread it evenly on a tray and let it dry for about 5 hours under sunlight for our candied green mango to dry.
Just put it in a jar (glass jar), close the lid, and store it in the refrigerator. Whenever you want to eat, just take it out and enjoy!
Tip: To avoid uncontrolled dust while drying in the sun, you can put the candied green mango in the oven and dry it at 60 degrees Celsius for 8 – 10 hours. -
