    To clean the chicken and effectively eliminate the odor, pluck the fine feathers and any remaining hairs, then soak the chicken in salt for about 10 to 15 minutes, and rinse it several times with water.

    Put a pot on the stove, and place the chicken in the electric pressure cooker to stew until cooked.

  • Make the noodle dressing

    Put a pan on the stove, add 2 tablespoons of cooking oil, 3 minced shallots, and 5 minced garlic cloves into the pan and stir for about 3 minutes, then add 2 cups of cold water, 2 tablespoons of oyster sauce, 2 tablespoons of soy sauce, 1 tablespoon of ketchup, 1 tablespoon of sugar, 1 teaspoon of five-spice powder, 1 tablespoon of fish sauce, stir the sauce for about 5 minutes then turn off the heat.

  • Fillet the chicken

    Remove the chicken from the pot and place it in a bowl of cold water to cool it down quickly.

    First, you fillet all the meat from the thigh and the area close to the thigh, then turn the chicken over and remove all the white breast meat, and shred all the skin-on meat from the chicken’s back.

    The pieces of meat that have been filleted should be shredded into bite-sized pieces.

    • Between the chicken thigh and the drumstick, there is a connecting joint; use a knife to cut right in the middle of that joint to separate the two parts for easier filleting.
    • For the breast, you can use a knife to cut the breast away from the chicken body to get the whole breast piece without it being torn.

    Blanch the noodle with boiling water until soft, then scoop it out into a bowl. After that, add bean sprouts, celery, mustard greens, chives, and the chicken on top.
