Notes on choosing good fish sauce
- You should choose fish sauce with an amino acid content of 25 – 43 degrees for good quality fish sauce, retaining all nutrients and being good for health. Traditional homemade fish sauce usually has an amino acid content of about 30 – 45 degrees, which can be used to cook delicious dishes.
- Choose good fish sauce that has a brown-yellow, brown-red, amber, or straw-yellow color, and is not cloudy. Avoid fish sauces that have a gray-green color indicating deterioration.
- You should not choose fish sauces with sediment at the bottom of the bottle as this could be additives that precipitate when combined with salt. However, traditional homemade fish sauce with sediment is not a problem because this type of sediment is due to salt precipitation, and just shaking it to dissolve evenly can be used again.

How to make Pepper Sauce

Cook the sauce
First, add 2 tablespoons of cooking oil and 50g of sugar to a non-stick pan. Turn on low heat and stir continuously until the sugar turns a beautiful caramel color, then add 400ml of fish sauce and stir well.
When the fish sauce boils, add 300g of sugar, 50g of monosodium glutamate, 50g of seasoning powder, and 250g of chili sauce to the fish sauce pot. Continue to stir well and cook on low heat until the spices dissolve completely and the fish sauce boils, then turn off the heat and scoop the fish sauce into a bowl.
You can replace the ceramic bowl with a container made of other materials. It is advisable to prioritize glass and ceramic materials as they are easier to clean the fish sauce smell than plastic. -
Braised Fish

Cook the pot over medium heat until it boils, and the fish turns a beautiful brown-yellow color, then add 50ml of water to the pot. Continue cooking until the water boils, then add 6 whole chili peppers (if you like it spicy, you can replace the whole chilies with 2-3 chopped chilies for more flavor).
When the water reduces slightly, switch to low heat and let the pot simmer until the braising liquid thickens, and the fish has a beautiful reddish-brown color, then add crispy pork fat, ground pepper, and a green onion cut into 2-3 cm pieces into the pot. After that, you can turn off the heat and enjoy your braised dish.
