Stingray 900 gr Lemongrass 4 stalks Chili 4 pieces Five-spice powder 1/2 tablespoon Cooking oil 4 tablespoons White wine a little Common spices a little (Salt/ Sugar/ Pepper/ MSG)

How to choose fresh and delicious stingray

  • When buying stingray, you should choose live ones that swim actively; the meat will be delicious and not flaky. Weakly swimming ones are those that have been caught for a long time, the meat is not good, and should not be purchased.

  • Choose stingray with moderately pink meat, not too dark or too pale, with good elasticity, and a not overly pungent smell.

  • Avoid buying stingrays that have slightly soft and mushy meat, with an overly strong smell, as these are dead fish.

How to Cook Fried Stingray with Lemongrass and Chili

  • Prepare the Stingray

    After buying the stingray, use salt to scrub it and wash it thoroughly to reduce the sliminess. Then, cut it into large slices, score it without cutting all the way through, and fold it to create wider pieces that will be easier to fry.

    How to Prepare Stingray to Reduce Fishy Smell and Slime

    • First, remove the gills, the blood sacs inside the belly, cut off the fins, and the intestines. Then, rub salt on the stingray for the first time and wash off the slime.

    • Next, use a knife to cut along the backbone of the stingray and remove all the bruised parts and the black membrane. After that, rub salt for the second time and rinse briefly with water.

    • Then, use a knife to scrape off the slimy layer on the stingray’s skin. After that, rub salt onto the skin and wash the stingray with diluted salt water mixed with ginger, white wine, or vinegar to completely eliminate the fishy smell and slime.

    • Finally, rinse with clean water and let it drain to finish.

  • Marinate the fish

    Marinate the stingray with the mashed lemongrass and chili, 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of salt, 1 tablespoon of sugar, 1 teaspoon of ground pepper, and 1/2 tablespoon of five-spice powder, then mix well and marinate for 15 minutes for the fish to absorb the seasoning.

    • You can substitute fresh chili with dried chili in equivalent amounts.

    Place a pan on the stove, add 4 tablespoons of cooking oil. Wait for the oil to heat up, then add the fish and fry until one side is golden, then flip it over and continue frying the other side. When both sides of the fish are golden, turn off the heat and transfer the fish to a plate.
