Pork ribs 1 kg Minced garlic 1/2 bulb Ginger 2 pieces (1 piece sliced/ 1 piece shredded) Shallots 4 bulbs (2 bulbs minced/ 2 bulbs sliced) Cooking oil 2 tablespoons Soy sauce 2 teaspoons Common seasoning a little (sugar/ salt/ seasoning powder/ ground pepper)

  • You should choose ribs with small, flat bones. This type of rib has more meat and less bone compared to large, round ribs.

  • Fresh ginger is characterized by a tight, shiny skin, feels heavy when held, and has a firm texture.
  • You should choose ginger that is still whole, and when smelled, it has the characteristic aroma of ginger.
  • You should not choose ginger that shows signs of spoilage; if it feels soft (some parts hard, some parts soft) when held. Avoid buying ginger with too many branches, as these are old ginger roots that have a lot of fibers, which will not taste good when cooked.

  • Prepare the Pork Ribs

    Fresh ribs should be washed with water, then cut into bite-sized pieces. Next, to remove the unpleasant smell of the ribs, put the ribs, 1 teaspoon of salt, sliced ginger, and sliced shallots into a pot and pour in about 1 liter of water, just enough to cover the surface.

    Boil the ribs over high heat until the water just starts to boil, then turn off the stove, then remove the ribs and rinse them again with water.

    • Blanch in boiling water: You can blanch the pork ribs in boiling water for about 2 – 3 minutes and then remove and rinse them with water.
    • Use odor-removing ingredients: Use natural ingredients such as: dried onion, white wine, vinegar, ginger, lemongrass,… When boiling, you can add one of these ingredients to effectively remove the smell from the ribs.
    • Use straw: While blanching the meat in boiling water, you can add 4 – 5 pieces of straw and blanch for about 2 – 3 minutes, then rinse with water.

  • Marinate the ribs

    Put the ribs into a bowl and marinate with the ingredients including: 1 tablespoon of sugar, 2 teaspoons of seasoning, 2 teaspoons of soy sauce, 1/2 teaspoon of ground pepper, minced shallots, minced garlic. Mix well and marinate for about 15 minutes for the ribs to absorb the flavors.

  • Stir-fry the ribs

    Add 2 tablespoons of cooking oil and 1 teaspoon of sugar into a pan. Cook the sugar on low heat until it melts and turns a brown color, then add the ribs. Stir-fry the ribs on high heat for about 3 minutes to let them absorb the flavors.

    Tip: Pre-frying the ribs will help them become firmer, release fat, and absorb flavors while saving time for braising.

    Next, add about 50 ml of filtered water to the pan, when the water starts to boil again, cover the lid and braise on low heat for about 10 minutes.

    After 10 minutes, open the lid and stir well so that the ribs absorb the seasoning, then cover the lid and braise for another 10 minutes.

    At this point, add the shredded ginger and mix well, continue braising for about 5 more minutes and then turn off the heat.
