Prepare the ingredients
First, buy straw mushrooms and use a knife to clean the mushroom stems and the black outer layer. Next, take a bowl, add 150ml of water, 2 teaspoons of white vinegar, and 1 teaspoon of salt, stir well, and then add the straw mushrooms to soak for about 10 minutes.
When the straw mushrooms are white, rinse them with clean water 2-3 times, then let them drain.
For lemongrass, slice it thinly and chop it finely. As for shallots, peel them and chop them finely along with the bird’s eye chili.
Proper way to prepare straw mushrooms:- Method 1: First, clean the mushroom stems, then rinse the mushrooms briefly with a mixture of water and rice flour, then soak the mushrooms in another mixture of water and rice flour for about 5 minutes and rinse again with clean water.
- Method 2: Additionally, to keep the straw mushrooms white and eliminate any unpleasant odor, soak the straw mushrooms in water mixed with lemon juice for about 10 minutes and then rinse clean.

Make satay
Put a pan on the stove with 3 tablespoons of cooking oil and 3 shallots to sauté until fragrant over medium heat.
Next, add all the minced lemongrass and bird’s eye chili and sauté for about 3 minutes. Then, add 3 tablespoons of annatto oil and continue sautéing for another 3 – 5 minutes before turning off the heat and transferring to a bowl.
Finally, pour 2 tablespoons of satay, 1/2 teaspoon of salt, 1/2 teaspoon of sugar, and 1/2 teaspoon of vegetarian fish sauce into a bowl, and mix the ingredients together until dissolved.
Tip: For unused satay, you can store it in a food container for 5 – 7 days! -
Sautéing straw mushrooms
With the same pan, add 100g of straw mushrooms and sauté over high heat for 2 – 3 minutes. Then, season with 1/2 teaspoon of salt and 1/2 teaspoon of sugar, sauté for another 3 – 5 minutes, then taste and adjust the seasoning to your liking, turn off the heat and transfer to a plate.

Place a pot on the stove with 500ml of water and bring to a boil. Once the water is boiling, briefly blanch the bean sprouts and chives that have been washed for 1 minute, then scoop them out into a bowl and let them drain.
Next, add 150g of rice noodles and boil for 3 – 5 minutes, until the noodles are fluffy, then scoop them into a bowl and let them cool.
After that, take a plate and add half of the boiled rice noodles along with the mixed satay sauce, mix well, then add some straw mushrooms, bean sprouts, chives, and fried tofu, and enjoy right away!
