Ingredients for Sour Tamarind Grouper Serves 4 people

Grouper 1 fish (about 1.5kg) Cornstarch 50 gr (or crispy frying flour) Garlic 3 cloves (minced) Tamarind paste 2 tablespoons Chili sauce 1 tablespoon Tomato sauce 1 tablespoon Cooking oil 10 tablespoons Salt/sugar a little

How to choose fresh and delicious grouper

  • Fresh and delicious grouper usually has a straight body, not slimy, and not bent. The meat has a greenish tint, close to the bones, firm, and has good elasticity.
  • Additionally, fresh grouper has dark red gills, gill covers close to the gills, and tightly closed mouth. The fish’s belly is not unusually bloated, with a pinkish-white or light pink color.
  • You should avoid buying grouper that has a fishy smell, mushy meat, slimy texture, and loose gills as these indicate the fish has gone bad, and its flesh can be harmful to human health.

How to prepare Grouper with Tamarind Sauce

  • Preprocessing grouper

    After purchasing the grouper, scale it, gut it to remove all internal organs and surrounding blood vessels. You should gently remove the internal organs to avoid breaking the gallbladder, preventing the fish meat from becoming bitter.

    To eliminate the fishy smell of the grouper, rub salt all over the head, body, and tail of the fish, then rinse it with clean water.

    Place the fish on a cutting board, and use a knife to make evenly spaced cuts on the fish, with the distance between the cuts being about 1/2 of your finger length.

    Effective ways to remove fishy smell:

    • Method 1: Besides rubbing salt on the fish as mentioned above, you can also remove the fishy smell by soaking the whole fish in diluted saltwater for 5 – 10 minutes, then take it out and rinse it with clean water.
    • Method 2: After preprocessing the fish, soak it in cold water mixed with a little white wine or vinegar for about 5 minutes, then take it out and rinse it clean.
    • Method 3: You can also add a few smashed ginger slices to the soaking water to enhance the effectiveness of removing the fishy smell and the flavor of the fish meat.

  • Fry the fish

    After the fish has drained, rub 50 grams of cornstarch evenly so that the starch coats the fish.

    Place a frying pan on the stove over medium heat, add 10 tablespoons of cooking oil, wait for the oil to heat up, then add the fish and fry for about 20 minutes until golden brown on both sides, then turn off the heat and let the fish drain oil.

    Tip: To make the fish crispy and not fall apart, fry one side until golden before flipping it to fry the other side!

  • Make tamarind sauce

    Place a pan on the stove over medium heat, add 1 tablespoon of cooking oil used for frying the fish into the pan, when the oil is hot, add minced garlic and sauté until fragrant.

    When the garlic is fragrant, add 2 tablespoons of water, 2 tablespoons of tamarind juice, 1 tablespoon of sugar, 1 tablespoon of chili sauce, and 1 tablespoon of ketchup, stir well and season to taste, then turn off the heat.

  • Final Product

    You arrange the fish on a plate, pour the sauce on top, and it’s done. The grouper with crispy skin is fried to a golden brown, the fish meat is firm, sweet and sour with a rich flavor. All the spices are absorbed wonderfully.
