- Fresh and delicious grouper usually has a straight body, not slimy, and not bent. The meat has a greenish tint, close to the bones, firm, and has good elasticity.
- Additionally, fresh grouper has dark red gills, gill covers close to the gills, and tightly closed mouth. The fish’s belly is not unusually bloated, with a pinkish-white or light pink color.
- You should avoid buying grouper that has a fishy smell, mushy meat, slimy texture, and loose gills as these indicate the fish has gone bad, and its flesh can be harmful to human health.
How to prepare Grouper with Tamarind Sauce

Preprocessing grouper
After purchasing the grouper, scale it, gut it to remove all internal organs and surrounding blood vessels. You should gently remove the internal organs to avoid breaking the gallbladder, preventing the fish meat from becoming bitter.
To eliminate the fishy smell of the grouper, rub salt all over the head, body, and tail of the fish, then rinse it with clean water.

Fry the fish
After the fish has drained, rub 50 grams of cornstarch evenly so that the starch coats the fish.
Place a frying pan on the stove over medium heat, add 10 tablespoons of cooking oil, wait for the oil to heat up, then add the fish and fry for about 20 minutes until golden brown on both sides, then turn off the heat and let the fish drain oil.
