Squid 400 gr Fresh lemongrass 4 stalks Spicy chili 1 piece Garlic 1 bulb Chili sauce 1 teaspoon (or chili paste) Rice wine 1/2 tablespoon Soy sauce 2 tablespoons Cooking oil 2 tablespoons Ice water 1 cup

How to Choose Fresh and Delicious Squid

  • You should choose squid that has bright colors, and especially the fresher the squid, the clearer and shinier the flesh will be.
  • For fresh squid, when you gently press it with your hand, the flesh will feel very firm and elastic. Additionally, the eyes of fresh squid will be clear and not bulging.
  • On the contrary, avoid choosing squid that has a dull color, with a lot of torn skin, soft and mushy flesh, as this indicates that the squid has been stored for a long time. Eating it will be less sweet and the flesh will be crumbly rather than crispy.

How to cook Stir-fried Squid with Lemongrass and Chili

  • Prepare the squid

    Buy fresh squid, clean it, and remove the fishy smell, then cut it into pieces about the length of a finger.

    Place a pot of water on the stove, bring to a boil over high heat, then add the squid and blanch for 3 minutes. When the squid expands, remove it and place it in a bowl of ice water that has been prepared to keep the squid crispy and chewy after cooking.

  • Prepare the ingredients

    Fresh lemongrass, peel off 1 – 2 outer layers, cut off the ends, wash clean, and slice thinly.

    Wash the chili peppers and slice them. Peel the garlic, wash it clean, and crush it.

    After about 5 minutes of stirring, add 2 tablespoons of soy sauce, stir well, then add 1/2 tablespoon of rice wine.

    Quickly stir the squid over high heat for about 15 – 20 minutes until the squid is cooked, then serve on a plate to enjoy while still hot.
