How to make Apple Yogurt Sponge Cake using an air fryer

Whip the egg whites
Separate the egg whites from the yolks.
Put 2 egg whites into a bowl, add a pinch of salt, and add 1 teaspoon of cream of tartar, then whip quickly until the egg whites become fluffy.
Divide 90gr of sugar into several equal parts and gradually add them to the egg whites, beating until the sugar dissolves and the egg whites are fluffy with soft peaks.

Mix the cake batter with egg whites
Put 2 egg yolks, 10g of sugar, 15g of cooking oil, and 40g of plain yogurt into a bowl, and mix the ingredients well.
Sift 100g of all-purpose flour into the mixture above, and mix until the mixture is well combined.
Add the whipped egg whites in small portions, gently stirring until all the egg whites are incorporated.
When mixing the ingredients together, you should gently fold (mix by lifting and turning from the bottom of the bowl upwards in one direction) and avoid mixing too vigorously to prevent breaking too many air bubbles, which would affect the cake’s rise. Just mix until the flour is evenly incorporated into the egg mixture.
Tip:
- You can divide the whipped egg whites into smaller portions and add them multiple times for a more even mixture.
- Folding the batter helps retain air bubbles, reducing the risk of overmixing that can cause the eggs to separate. Additionally, folding reduces clumping of the flour, allowing for quicker and more even mixing. When making cakes that use egg whites to help them rise, it is important to fold gently.

Cutting the apple
Wash the apple, remove the stem, and cut it into 8 wedges as shown.

Pouring the batter and baking the cake
Line the cake pan with non-stick parchment paper (you can adjust it according to your own pan).
Gently pour the mixed batter into the pan, spreading it evenly. Tap the bottom of the pan lightly to break any large air bubbles.
Arrange 8 apple slices around the cake as shown.
Preheat the air fryer for about 10 minutes at 160 degrees before baking. Place the cake tray inside, and bake the cake for about 20 minutes at 160 degrees Celsius until fully cooked.
