Ingredients to make sponge cake without an oven

1. How to make sponge cake using a rice cooker
Step 1: Separate the egg yolks and egg whites into 2 separate bowls. Then, add half a teaspoon of salt and 4-5 drops of lemon juice, while gradually adding 70 grams of sugar until the egg whites become frothy.
Step 2: Sift the flour and cornstarch until fine. Add vanilla, fresh milk, and cooking oil and mix well with the egg yolk bowl. Pour in the sifted flour and mix well to create a smooth mixture.
Step 3: Gently fold the egg yolk mixture with the whipped egg whites. Do not mix too long as it will cause the cake batter to become tough when baked.
Step 4: Bake the cake
– Line the bottom of the rice cooker with parchment paper so it is easier to remove the cake once it is cooked. Pour the cake batter mixture into the rice cooker.
– Press Cook for clamp lid rice cookers and electronic rice cookers.
– Press Menu to select the cake baking mode and wait for the cooker to run for about 40 minutes (for electronic rice cookers with a cake baking mode).
Step 5: After the set time, press down on the surface of the cake with your finger. If the sponge cake surface does not sink, the cake is done; wait for it to cool a bit before removing it for immediate use. If it is not cooked, press the Cook button one more time.
2. How to make sponge cake using a non-stick pan
Step 1: Cut cardboard and parchment paper into small pieces measuring 20 cm long, 6 cm wide. Secure the parchment paper and cardboard together using a stapler.
Then roll the paper into a mold with a height of 6 cm ensuring the parchment paper is on the inside. (Note: You can replace parchment paper with white A4 paper)
Step 2: Separate the egg yolks and egg whites into 2 separate bowls. Use a hand mixer to beat the egg whites at a low speed until frothy. Then, add the lemon juice and gradually increase the speed for about 2-3 minutes before slowly adding in the sugar. Continue to beat until the egg whites are fluffy.
Step 3: Add the egg yolks to the whipped egg whites and beat at a low speed. You dissolve the fresh milk, vanilla, and cooking oil into a homogeneous mixture. Slowly add this mixture to the previously whipped egg cream and mix well.
Step 4: Sift and mix the cornstarch and flour until fine, dividing it into 3 parts, adding each part to the egg mixture from step 3, and mixing everything well.
Step 5: Heat the pan over low heat. Spread a thin layer of oil evenly in the pan. Place the paper mold in the center of the pan, and pour a quantity of batter into the mold. Note, you should pour 3/4 of the height of the mold to give the cake room to rise. Cover the pan and fry for about 8 minutes until golden, then flip the cake and fry for an additional 5-6 minutes.
Step 6: When the cake is done, let it cool, remove the paper mold, and enjoy.
3. How to make sponge cake using a microwave
Step 1: Separate the egg yolks and egg whites into 2 separate bowls. Then, add half a teaspoon of salt and 4-5 drops of lemon juice, while beating and gradually adding 70 grams of sugar until the egg whites are fluffy.
Step 4: Use butter to evenly coat the bottom of the mold or use parchment paper to prevent sticking. Preheat the microwave before putting the cake in.
Step 5: Pour the batter into the mold and place the mold in the microwave to bake for about 30-35 minutes depending on the temperature you adjust.
When baking, set the double-sided baking mode and place the cake in the middle of the oven. Do not put too much batter into the mold as it will affect the temperature in the oven as well as the cake’s expansion.
Step 6: When the cake is done, turn off the oven and let it cool for 5-10 minutes before serving.
4. How to make soft and smooth steamed sponge cake
Step 1: Separate the egg yolks and egg whites into 2 separate bowls. Then, add half a teaspoon of salt and 4-5 drops of lemon juice, while whisking, gradually add 70 grams of sugar until the egg whites become frothy.
Step 3: Mix the yolk mixture with the whipped egg whites evenly.
Step 4: Choose small or medium molds to shorten steaming time and help the cake cook more easily. Brush a layer of butter or parchment paper into the mold to prevent the cake from sticking.
Step 5: Only pour the batter into about 3/4 of the mold, do not pour too much as the batter rises, which can affect the cake’s appearance and make it difficult to cook.
Step 6: Place the cake mold into the steamer for 20 minutes.
Note: The water level in the pot should be lower than the steamer and not too much, to limit the water from wetting the steamer and soaking into the cake. When the cake is cooked, it should be left in the steamer 5-10 minutes to cool before taking it out, to avoid sudden temperature changes that can make the cake dense and not fluffy.
5. Variations of Sponge Cake
