How to make Oreo Mooncake

  • Separate the Oreo cookies

    Use a knife or a spoon to separate the cookie and cream into 2 separate bowls.

    Then, roll all the cream filling into 2 large balls and place them in the fridge refrigerator.

  • Mix the Oreo mooncake crust

    Put the cookie crust into a blender, then blend until very smooth.

    Next, melt 40g of unsalted butter, then add it gradually to the cookie crust mixture. Use your hands to mix until the dough sticks together and can be formed into a ball.

    Note:

    • If the cookie crust is still dry and does not stick together, continue to add melted unsalted butter and mix well.
    • Do not add all the melted butter at once, as it may cause the cookie crust to be too wet and unable to hold its shape.

  • Shape the cake

How to Make Mooncakes with Oreo Filling

  • Cooking and Blending Mung Beans

    Wash the peeled mung beans, soak them in water for 3 – 4 hours, and remove any spoiled beans that float to the top. Then, rinse the mung beans thoroughly with water and drain.

    Place a pot on the stove, add about 500ml of water along with 200gr of mung beans, and simmer until soft.

    Once the mung beans are soft, transfer them to a blender and blend the mixture until smooth.

  • Cooking the Mung Bean Filling

    Heat a pan on the stove, pour the blended mung beans into the pan to cook the filling.

    Next, add 70ml of cooking oil, 30gr of sugar, and 30ml of coffee extract, using a spatula to stir well and cook for about 15 minutes until the filling thickens and becomes smooth.

  • Making the cake filling

    The mung bean mixture after cooking should be placed in a large bowl to make the cake filling.

    You should crush half a pack of Oreo cookies and add them to the bowl. Then, wear gloves and mix the filling thoroughly. With this amount of filling, you can divide it into 4 equal parts of about 65 grams each.

    For the cream cheese, cut it into 4 pieces of about 20 grams and roll them into balls.

    Next, you will gently press the mung bean Oreo filling, place the cream cheese ball in the center, and roll it back into a ball. Repeat this process for the remaining filling to create 4 portions for the Mid-Autumn cake.

  • Mixing the dough for the cake skin

    Add 160ml of syrup for the baked cake, 35ml of cooking oil, and 2g of baking soda to the bowl, stir well and let it rest for 5 minutes.

    With the remaining half pack of Oreo cookies, separate the skin and crush it finely to mix with the dough.

    Then, continue to add 250g of all-purpose flour along with the crushed half pack of Oreo cookies, use your hands to mix until the dough forms a cohesive mass and let it rest for 30 minutes.

  • Shape the cake

    After 30 minutes, take the dough out and proceed to roll it into balls to shape the cake.

    Divide the dough into 4 equal parts, flatten the dough, place the filling in the center, and roll it into a ball.

    After rolling all 4 portions of the cake, dust a layer of flour into the mold to prevent sticking when shaping the cake.

    Place the dough balls on a layer of parchment paper, put the mold on top of the dough ball, and press down firmly to create the distinctive mooncake shape.

  • Bake the cake

    Before baking, you should preheat the oven to 170 – 175 degrees Celsius for 15 minutes. Then, place the cakes on the baking tray and bake for the first time for 13 minutes at 190 degrees Celsius.

    Next, lower the temperature and bake the cakes for the second time for 7 minutes at 185 degrees Celsius until the top of the cake turns slightly golden brown.

    The mooncake with filling made from oreo wrapped in a rich cheese layer is very appealing.
