How to Choose Fresh and Delicious Octopus
- When buying live octopus, you should choose the ones that are still flexible and move quickly. Do not buy those that move slowly or have dull eyes.
- When buying frozen octopus, select those with a natural brown-gray color, not too dark or too light. The flesh of the octopus should be bright white, with smooth and silky skin.
- Do not choose octopus that has mushy flesh, is slimy, or has an unusual foul smell.
How to prepare Marinated Octopus with Lemongrass and Calamansi

Prepare the octopus
Buy the octopus, remove the beak, eyes, and internal organs, and place it in a basin.
To eliminate the fishy smell of the octopus, add 2 tablespoons of salt to the basin, rub it vigorously several times, then rinse thoroughly with water and let it drain.

Prepare other ingredients
Peel the ginger, garlic, and lemongrass, wash them thoroughly, and slice them thinly.
Wash the chili and calamansi. Take 5 calamansi, remove the seeds, and cut them into thin slices. Squeeze the juice from the remaining 5 calamansi.

Boil the octopus
Place a pot on the stove with 1 liter of water, then add 1/4 of the prepared lemongrass, ginger, chili, and 1 tablespoon of salt.
When the water boils, add the octopus and boil for about 3 minutes, then remove and let it drain.

Cooking vinegar and sugar water
Put 200ml of vinegar, 400ml of filtered water, 300gr of sugar, and 100ml of fish sauce into a bowl, stir well, then boil the mixture for about 2 – 3 minutes, season to taste, then turn off the heat and let it cool.

Marinating octopus
Prepare a bowl, add all the chopped garlic, chili, lemongrass, ginger, calamondin, calamondin juice, and vinegar and sugar water together, and stir well.
Then add the boiled octopus, mix well, and marinate for about 2 – 3 hours to absorb the flavors before serving.
