Prepare Other Ingredients
Soak the wood ear mushrooms in cold water for about 10 minutes until they expand, then drain, rinse, and chop finely. Soak the shiitake mushrooms in warm water for about 10 minutes until they expand, then rinse and chop finely.
Wash the lemongrass, cut into pieces about the length of your pinky finger, and crush it. Wash the chili peppers and chop them finely. Peel the shallots, wash them clean, and chop them finely.
