Ingredients for Steamed Buffalo Meat with Lemongrass Serves 4 people

Buffalo meat 500 gr Lemongrass 100 gr Chili 5 pieces Shallots 10 bulbs Garlic 10 cloves Cooking oil 2 tablespoons Satay 1 tablespoon Fish sauce 1 tablespoon Common seasonings a little (seasoning powder/ sugar/ monosodium glutamate)

How to choose fresh and delicious buffalo meat

  • Good buffalo meat has a dark red color, with white fat streaks interspersed inside the meat.
  • Choose pieces of buffalo meat that have slightly coarse fibers, the meat surface is firm, and when smelling, there is a characteristic raw meat odor.
  • Buffalo meat usually contains a certain amount of water; when held, it will feel heavy, but your hands will not be wet, so pay attention to this point.
  • It is advisable to buy buffalo meat from reputable places to ensure the origin as well as its freshness and safety.
  • Do not buy buffalo meat with a pale color, watery, or too dark in color as this indicates dirty meat that is not usable.
  • Avoid choosing meat that has a sour smell, and if the meat feels slimy when touched, it means it has gone bad.

How to make steamed buffalo meat with lemongrass

  • Prepare the marinating ingredients

    Peel the shallots and garlic, mince the garlic and slice the shallots.

    Remove the damaged and old outer layers of the lemongrass, discard the roots, then wash it along with the chili and let it drain.

    Then cut the stalks and leaves in half, mince about 3 stalks of lemongrass, and crush the rest; remove the stems from the chili and slice it.

  • Prepare and marinate the buffalo meat

    After buying the buffalo meat, wash it thoroughly, let it drain, then cut the meat into thin slices, about the length of a hand span.

    Tip to eliminate the smell of buffalo meat:

    • After rinsing the buffalo meat with cold water, you can use a little white wine and massage the meat for about 5 minutes, then rinse it several times with clean water.
    • Alternatively, you can replace the wine with vinegar or coarse salt to massage the meat, following the same process as with white wine.
    • Do not use lemon to wash buffalo meat, as lemon will make the meat lose its tenderness and flavor.

    Then marinate with minced lemongrass and half of the sliced chili, 1 teaspoon of seasoning, and 1/2 teaspoon of monosodium glutamate, then mix well, marinate the meat for 10 – 15 minutes.

  • Steam the buffalo meat

    Take 2 pieces of buffalo meat and wrap them around 1 crushed lemongrass stalk, repeat the process until all the meat is used.

    Place the lemongrass leaves in the steaming pot, add the buffalo meat, cover the pot, and steam for about 10 minutes over medium heat.

  • Make the sauce

    Add 2 tablespoons of cooking oil to the pan, heat the oil, then add 1/2 of the sliced shallots, and sauté the shallots over medium heat until fragrant.

    Next, add minced garlic and sliced chili, stir-fry for about 2 minutes, then add 2 tablespoons of sugar, 1 tablespoon of fish sauce, stir well until the sugar dissolves, then add 1 tablespoon of chili paste.

    Taste and adjust the seasoning as needed, add the remaining shallots, and turn off the heat.
