Snakehead fish 1.5 kg Vermicelli 100 gr Carrot 50 gr Lemon 1/2 fruit Wood ear mushrooms 50 gr Minced shallots 3 bulbs Green onions/coriander a little Fish sauce 1 tablespoon Cooking oil 1 tablespoon Common seasoning a little (salt/ pepper/ sugar/ seasoning powder/ monosodium glutamate)

    To eliminate the fishy smell and slime of the snakehead fish, clean the internal organs, gills, and fins, then rub salt and lemon around the fish and rinse with water 2 – 3 times. Next, use a knife to cut the fish into pieces that fit the steaming pot (or leave it whole), and make a few diagonal cuts on the upper body of the fish so that the marinade can penetrate the meat.

    Peel the carrot and cut it into thin strips. Clean the green onions and coriander, cutting them into pieces about the length of a finger. Soak the vermicelli in water for about 5 minutes, then drain. Soak the dried mushrooms in water for about 15 – 30 minutes, then cut into strips.
