- The best snakehead fish for making a delicious dish is the living wild snakehead fish, swimming healthily and of moderate size.
- The wild snakehead fish has a big head, a long tail, and the skin on its back usually has a clay-yellow color, while the skin under the belly is shiny yellow or yellow with spotted patterns.

Preparing the snakehead fish

Preparing the remaining ingredients
Chop 1 onion into wedges. Peel and slice 5 shallots.
Finely chop 5 cloves of garlic. Cut off the roots of 3 green onions and chop them small to make onion oil.

Fry Fish
Place a pan on the stove, add 100ml of cooking oil, and add 1 tablespoon of cornstarch to prevent oil splatter while frying the fish.
Wait for the oil to heat up, then add the fish and fry for about 10 minutes until both sides are golden. While frying, you can scoop some oil and drizzle it evenly over the fish to ensure it cooks evenly.

Make Coconut Sauce
Place a pan on the stove, add 1 tablespoon of cooking oil, and wait for the oil to heat up before adding minced garlic to sauté until golden and fragrant.
Then add 200ml of coconut milk, followed by 1 teaspoon of seasoning and 2 teaspoons of sugar. Next, add chopped onions, shallots, and the green onion roots. Stir well for about 5 minutes and then turn off the heat.
