Prepare the ingredients
Peel the carrot, wash it clean, and then chop it finely with a knife.
Soak the wood ear mushrooms in clean water for about 30 – 45 minutes until they soften, then drain. After that, chop the wood ear mushrooms finely.
Remove the roots of the scallions, discard the yellow leaves, wash them clean, and then chop them into small pieces.
How to properly prepare wood ear mushrooms:
- You should only soak dried wood ear mushrooms for a maximum of 3 – 4 hours before cooking. Avoid soaking them for too long or overnight, as this can lead to the production of toxins in the mushrooms, which is harmful to health.
