Ingredients for Steamed Fish Rolled in Rice Paper For 2 people

How to Choose Fresh Fish
- Choose live fish that are fresh, swim vigorously, have clear, bright eyes, are not cloudy, and slightly swollen.
- Choose fish that have firm meat, tightly bound together, not loose, have high elasticity, and when sniffed, have a sea smell.
- To buy fresh fish, you should go to the market early in the morning when the fish have just been caught and still have the characteristic sea smell.

How to make steamed fish wrapped in rice paper

Prepare the ingredients
Green onions, onions, and ginger should be washed and finely sliced. Use 1 red chili pepper, minced.
Pick the fresh leaves for garnish, discard any spoiled or wilted ones, then soak in diluted salt water for about 5 – 10 minutes and rinse with clean water.
Cucumbers and mangoes should be washed and sliced thinly lengthwise.
The fish should be cleaned, washed, and drained. Use a knife to make 2 cuts along the fish’s body.
How to prepare to reduce the fishy smell of the fish
- Method 1: After cleaning the fish, you can soak it in rice washing water for about 15 – 20 minutes. Then take it out and rinse thoroughly with water.
- Method 2: Rub salt over the fish’s body, then clean it and just rinse it with water before cooking.
- Method 3: Squeeze lemon juice into warm water, then soak the fish for about 5 – 7 minutes, and then rinse with water.

Marinate the fish
Place the fish in a wide, deep plate or in a bowl to marinate.
Note: You can choose a stainless steel plate or mold as a substitute for the plate!
Add all the chopped green onions, onions, ginger, and chili, along with 1/2 teaspoon of pepper, 1 tablespoon of sugar, 1 tablespoon of fish sauce, 1 teaspoon of seasoning powder, and 1 tablespoon of cooking oil along with 1 tablespoon of annatto oil to marinate the fish.
Stir well to let the spices soak into the fish meat. Let it sit for about 10 – 15 minutes for the fish to absorb the flavors.

Steam the fish
Pour water into the bottom of the steamer and place it on the stove. Then, place the plate of fish on the steamer, cover the pot, and start steaming. Boil the steamer for about 20 minutes for the fish to cook evenly.
Prepare the dipping sauce with the recipe: 2 green chilies, 2 red chilies, 5 cloves of garlic, minced or crushed. Put in a bowl with 1 tablespoon of lime juice, 3 tablespoons of fish sauce, and 1 tablespoon of sugar, stir until everything is well combined.
Tip: You can adjust the ratio of spices used for the dipping sauce to suit your family’s taste.
