Enoki mushrooms 600 gr Ginger 1 piece Shallots 4 pieces Garlic 2 cloves Chili 2 pieces Green onions 4 stalks Oyster sauce 1 tablespoon Soy sauce 5 tablespoons Cooking oil 2 tablespoons Common seasoning a little (salt/ seasoning powder/ sugar)

How to choose fresh and delicious enoki mushrooms

  • You should choose mushrooms that are white, still fresh-looking, with no bruises, intact roots, and the mushroom cap firmly attached to the stem.
  • When buying packaged mushrooms, you need to pay attention to select dry mushrooms, with surfaces that are not moldy, and the package shows no signs of leaking.
  • Avoid buying mushrooms with spots on the stem or slightly yellowish, or with an unusual bad smell as these are low-quality mushrooms that can affect the taste of the dish and your health.

    Peel the ginger, wash it clean, and cut it into small slices. Next, slice 2 shallots, and finely chop the remaining 2.

    Peel and finely chop the garlic. Clean the roots of the green onions, wash them, and then chop them finely. For the chili, rinse it under water, drain, and then chop it finely.

  • Prepare the steamer and steam the mushrooms

    Place the sliced ginger and shallots in the steamer, then place the prepared mushrooms on top. Season with 1/2 teaspoon of seasoning and 1/2 teaspoon of sugar, then steam the mushrooms for about 5 minutes over high heat.

  • Make the soy sauce

    Heat a pan on the stove, add 2 tablespoons of cooking oil. When the oil is hot, add minced garlic and shallots and sauté until fragrant.

    Once the garlic and shallots are golden and fragrant, add 5 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of seasoning powder, and 1 tablespoon of oyster sauce to the pan, stirring well to combine.

    Next, add 10ml of water to the mixture and cook the sauce over medium heat for about 5 minutes until the mixture boils. Adjust the seasoning to your liking and then turn off the heat.

    Evenly drizzle the prepared sauce over the steamed enoki mushrooms, sprinkle some finely chopped green onions on top, then cover and steam the mushrooms for another minute. Adding some finely chopped chili on top will complete the dish.
