How to choose fresh ingredients
How to choose fresh crabs with firm meat:
- When selecting crabs, buyers need to squeeze the shell and the abdomen of the crab to see if it is firm; if it is firm, it indicates that the crab has firm meat. Conversely, if it is soft, the crab may have little meat or be underweight.
- Gently squeeze the thigh part of the swimming leg, under the crab’s shell; if the crab struggles with the whole leg, it is healthy and has good meat.
- Check the skin of the upper claw. If it has a pink-red color or a dark pink color, it means the crab has plenty of meat.
How to choose good shiitake mushrooms
For this dish, you can use either dried or fresh shiitake mushrooms.
For dried shiitake mushrooms
- Choose firm ones that are not broken, bright in color, and have no white mold spots. It is advisable to buy from reputable stores to ensure safety.
For fresh shiitake mushrooms
- Choose those that are vibrant in color, have a characteristic aroma, with moderate caps, tightly curled, and slightly yellow-brown in color.
- Select mushrooms with firm stems and uniform color; if the mushrooms have opened and you can see the gills on the cap, they should be evenly arranged, beautiful, and dry.
- Avoid choosing mushrooms that are bruised, have a rotten smell, or are slimy. If you see dark brown mushrooms, do not buy them, as they may be poisonous.

How to make steamed crab with sticky rice and oyster sauce

Prepare the crab
Wash the crabs thoroughly, then use a sharp knife to stab under the crab’s belly to stop its movement. After that, use a brush to scrub the shell and the belly of the crab under strong running water to remove all algae and dirt.
Finally, use your hands to separate the belly, remove the gills and lungs of the crab, then use a spoon to scoop the crab roe separately.

Cook the sticky rice
Rinse 400 grams of sticky rice, then add enough water to cover the rice and soak overnight.
First, heat the steamer lined with a thin layer of cloth over high heat. Then, add the soaked sticky rice and steam for 20 – 25 minutes on high heat.

Prepare the shiitake mushrooms
You soak them in water until they expand and then rinse with clean water (and squeeze out the excess water if you want), let them drain. Alternatively, you can boil the mushrooms in a pot of boiling water for about 3 minutes, then remove and let them drain.
When the mushrooms have drained, cut them into small cubes.
How to prepare shiitake mushrooms
For dried shiitake mushrooms: You can prepare them depending on the cooking time of the dish as follows:
- Method 1 (soaking): Soak the mushrooms in water for about 1 – 2 hours, then rinse with clean water and let them drain before cooking. To make the mushrooms expand faster, you can soak them in warm water at 60 – 80 degrees Celsius, and after 7 – 10 minutes, they will expand.
- Method 2 (boiling mushrooms): Rinse the mushrooms briefly with clean water, then boil them in a pot of boiling water for about 3 – 5 minutes.
Note: Regardless of the preparation method, you should gently rub with your hands to clean off any dirt, then squeeze out the water and let them drain before cooking.

Mix the steaming sauce
You add 150ml of hot water into a measuring cup along with 1 tablespoon of soy sauce, 2 teaspoons of oyster sauce, 1/2 teaspoon of dark soy sauce, 1 teaspoon of chicken seasoning powder, 1/4 teaspoon of salt, 1/8 teaspoon of pepper, and 1 teaspoon of sesame oil, then stir the mixture well.

Sauté mushrooms
Heat a pan on the stove with 1 tablespoon of cooking oil, when the oil is hot, add 30g of dried shrimp and sauté until fragrant. Next, add 30g of minced shallots, 15g of minced garlic and sauté until the shallots and garlic turn golden.
Then, add 1 cup of diced sausage and shiitake mushrooms, stir-fry for 2 minutes with 2 tablespoons of Huatiao wine.

Fry rice
Once the ingredients are cooked, add the sticky rice and all the sauce. Stir well to allow the seasoning to soak into the rice and the other ingredients.

Steam rice and crab
Line a layer of lotus leaves in the steamer, add the sautéed rice and spread it evenly, sprinkle chopped green onions on top, and place the crab on top with a little Huatiao wine drizzled over the crab. Then, steam the rice and crab over high heat for 15 – 20 minutes until the crab is cooked evenly.
