How to make Sticky Rice Cake with Mung Bean Filling

  • Soak and cook mung beans

    After purchasing, wash and soak the mung beans for 8 hours. After soaking, rinse the mung beans again, drain them, and let them dry.

    Next, put the mung beans into a pot of water so that the water level is about 2cm above the beans and cook until soft, which takes about 15 minutes.

    During cooking, add 1/2 teaspoon of salt to enhance the flavor of the beans.

  • Make mung bean filling

    When the mung beans are soft, let them cool slightly and place them in a blender with 200ml of water. Blend the mung beans until smooth, then transfer to a pan and cook until the filling thickens and no longer sticks to the pan.

    While cooking, add 100g of granulated sugar and 15ml of cooking oil. When the filling is thick, add 1 tube of vanilla to enhance the flavor of the filling.

  • Mixing sticky rice flour

    First, add 400g of sticky rice flour and 1/2 teaspoon of salt into a bowl. Gradually pour in 400ml of boiling water into the flour and mix well.

    Knead the dough until it is smooth and does not stick to your hands. Then, cover the dough to prevent it from drying out and let it rest for about 10 minutes. The next step is to divide the dough into 11 equal parts and roll them into balls.

    Tip: To make kneading the dough easier and to prevent it from becoming too runny, you should use boiling water at a temperature of 70 degrees Celsius or higher.

  • Wrapping the cake

    You take 1 portion of dough and roll it flat, then place the mung bean filling in the center. Next, you wrap it up and shape the cake into a round form, which will look more appealing.

    After that, you take 2 pieces of banana leaves (cut into squares) and stack them on top of each other.     After washing the sticky rice with water, soak it for 6 – 8 hours or overnight to soften the rice, then grind it using a blender or stone grinder.

    Next, tie a large cloth bag around the mouth of a container and pour the ground sticky rice into the tied bag, then use a string to secure the bag tightly.

    You hang the bag up high until all the water from the dough is pressed out to form a thick wet dough mixture.

    Then, pour the thick wet dough into a bowl or tray, add 1 teaspoon of salt, and use your hands to knead until the dough forms a smooth mass.

    Tip:
    • For better taste, you should grind the wet dough using a stone grinder instead of dry grinding with a blender.
    • If the dough is too dry, add more water to knead the dough evenly until the dough mixture is not sticky to your hands.
