How to choose fresh and delicious strawberries
- Choose large, bright red strawberries that are firm and still have their green caps.
- Avoid choosing overripe strawberries as their insides may be dry and hollow.
- Do not choose dull-colored, misshapen, or rotten strawberries. Additionally, those with green skins and many spots should also be avoided as strawberries won’t ripen after being picked.
- If using strawberries on the same day, you can keep them at room temperature. If you want to preserve them for longer, about 5 – 7 days, you should wrap them in a paper towel and place them in the refrigerator.

How to make Strawberry Candy

Prepare the strawberries
First, prepare a small basin of water, add about 1 teaspoon of salt, and stir well.
Remove the stems from the strawberries and put them in the basin of diluted salt water. Soak the strawberries for about 5 minutes, then take them out and rinse them with clean water, and let them drain.

Blend and marinate the strawberries
Put the strawberries into a blender and blend until smooth.
Pour the blended strawberry mixture into a pan, add 300g of sugar and 1/2 teaspoon of salt. Mix the ingredients well and marinate for 2 hours for the sugar to dissolve completely.

Strawberry Candy Cooking
After marinating the strawberries, place the pot of strawberries on the stove. Stir the mixture well and cook on high heat until it boils, then reduce to low heat.
Next, cook the mixture until the strawberries reduce in water and become slightly thick. During the cooking process for about 5 – 10 minutes, stir once to avoid burning at the bottom of the pot.
Then, add 1 tablespoon of cooked glutinous rice flour to the pot, mix well until the flour dissolves, and turn off the heat.
Tip: To check if the jam has thickened enough, scoop a little jam and if it flows down slowly, it’s good to go.

Shaping
Wait for the strawberry jam to cool slightly, then start rolling it into small balls. You can shape them into large or small balls depending on your preference.
Place the strawberry balls on a plate lined with parchment paper. Wait for the jam to dry, then take each ball, wrap it in plastic wrap, and twist both ends tightly (as shown below).
Tip: To avoid sticking to your hands while shaping, apply a little butter to your hands and spread it evenly.

How to Store Candy for Tet
- Store coconut jam by placing it in a jar and sealing it tightly.
- You can roll the candy (jam) in a layer of sugar before placing it in the storage jar. This layer of sugar will help absorb moisture, allowing the candy (jam) to be stored for a longer time, possibly up to 2 – 3 months.
- Each time you use it, you should only take out a sufficient amount for use on a plate, then tightly seal the bag and continue to store it to prevent air from getting in and causing the jam to spoil quickly.
