  • You should choose chicken pieces with a dry surface, and when pressed, the meat retains its elasticity as this indicates it is fresh and newly slaughtered.
  • Good chicken will have a light yellow color, bright appearance, and when smelled, there is a characteristic raw meat odor, with no strange smell.
  • Avoid selecting soft, mushy pieces that are pale or slightly discolored as they may have been chemically treated and spoiled.

  • Nén bulb, commonly known as shallot, is a type of plant belonging to the onion family, primarily distributed in Europe, Asia, and North America.
  • Nén bulb has a spicy, slightly sweet taste, a strong aromatic smell, and is often used as a seasoning to create flavor in dishes.
  • Currently, you can easily find shallots (nén bulb) at large supermarkets, markets, or on reputable e-commerce sites. When buying, be sure to check the packaging as well as the expiration date of the product!

How to make Chicken Stew

  • Prepare the ingredients

    After buying the chicken, rub it with a little salt, wash it clean with water, drain it, and then cut it into bite-sized pieces about the size of two fingers.

    Tips to prepare chicken without odor:
    • Method 1: Mix salt and vinegar in a 2:1 ratio, then rub it evenly all over the chicken. After that, use your hands to rub it multiple times, then wash it thoroughly with water once again and let it drain.
    • Method 2: Rub the chicken with a few slices of lemon and a little salt, then wash it clean with water several times.
    • Method 3: Crush 1 piece of ginger with a little white wine and then massage it onto the chicken. Next, let it sit for about 30 minutes before rinsing it with water and letting it drain.

    You wash the lime leaves clean, leave half of the lime leaves whole, and slice the remaining half into long strips about 1 – 2 finger lengths.

    Ginger is bought, the outer skin is scraped off with a knife and sliced thinly. The shallots are peeled, washed, crushed, minced, and then divided into 3 portions.

  • Marinate the chicken

    Put the chicken in a large stainless steel pot to marinate with the seasonings including: 1 tablespoon of fish sauce, 1 portion of shallots, 1 teaspoon of turmeric powder, then leave it for 30 minutes in the refrigerator to let the meat absorb the seasonings.

  • Chicken Stew

    Place a pot on the stove over medium heat, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add a portion of shallots and sauté until fragrant for about 2 minutes.

    Next, add the marinated chicken to the pot, add sliced ginger, and stir-fry until the meat is browned. Pour in enough water to cover the meat and cook on high heat; when the water boils, add 1 teaspoon of salt, continue to boil, then reduce the heat and simmer for about 20 minutes until the chicken is tender.

    Add the remaining shallots and whole lime leaves, stir well, taste and adjust the seasoning to your preference, then turn off the heat.

    Tip: For this chicken stew dish, you should season it lightly rather than salty like other braised dishes!
