- When choosing a whole, live goose, you should select those with a round breast, smooth feathers, and that are alert and active.
- Pay attention to the goose’s beak, which should not be slimy and should be round in shape, as this indicates a good quality goose that is not too old.
- The goose’s legs should be normal and not ulcerated; these are healthy geese that you should buy.
- Avoid purchasing geese with dull eyes, slimy beaks, or ulcerated legs, as they are often sick.
How to choose pre-processed geese
- For plucked geese, you should clearly observe that the breast is large and round, the skin is white and thick, and when pressed, it still feels elastic.
- A cut on the neck that still has blood and the meat inside is pink-red indicates fresh, recently slaughtered geese.
- You should not choose geese with sagging bellies as they are usually geese that have laid eggs, and their meat is very tough and not tasty.
- If you notice that the goose’s skin is unusually tight and smoother than normal, you should avoid buying it as they have likely been injected with water.

How to cook Garlic Roasted Goose using an air fryer

Prepare and marinate the goose meat
After cleaning the goose, rub it with 2 tablespoons of white wine and 1/2 piece of crushed ginger (small piece) for 5 minutes. Then chop the goose meat into bite-sized pieces.
How to clean goose meat without odor
- First, you need to remove the feathers and the internal organs, then rinse off the blood.
- Use vinegar mixed with salt and apply it evenly to the goose or you can soak the goose in that mixture for about 3 – 5 minutes. After that, rinse with clean water, chop the goose into small bite-sized pieces, and it’s ready for cooking.
- Additionally, you can substitute with lemon juice mixed with a little salt or white wine with salt, then proceed as above.
Peel 10 cloves of garlic, scrape the skin off 1/2 piece of ginger, remove the stems, and clean 4 chili peppers. Finely chop the ginger, chili, and 4 cloves of garlic, keeping each type separate.
After preparing the goose meat, put it into a bowl and season with the spice mixture: 2 teaspoons of minced garlic, 1 tablespoon of minced ginger, and 1 teaspoon of minced chili along with 1 tablespoon of ground pepper, 1 tablespoon of sugar, 2 tablespoons of soy sauce, 1 teaspoon of salt, and 2 tablespoons of oyster sauce.
Mix the goose meat well, then use plastic wrap to seal the bowl tightly, place it in the refrigerator for 1 hour.
The remaining garlic should be sliced thin and fried until golden and crispy. Remove the garlic and keep the frying oil.

Fry the goose using an air fryer
Place the marinated goose meat in the air fryer, brush a layer of garlic oil on top of the meat, and grill at 200 degrees Celsius for 10 minutes.
Then flip the meat and grill for another 5 minutes at 200 degrees Celsius to finish.

In a small bowl, add 4 tablespoons of filtered water, 3 tablespoons of fish sauce, 2 tablespoons of sugar, juice from 1 lime, 1 tablespoon of chili sauce, and the remaining minced garlic and chili.
