How to prepare Stir-fried noodles with shrimp and squid

Prepare and marinate shrimp and squid
Peel the shrimp, remove the head and take out the black vein on the back, then rinse with water and drain.
For the squid, clean it by pulling out the head and tentacles, using a knife to cut off the eyes and beak, then rub with a little salt. After that, rinse the squid clean and let it drain. Next, cut the squid into bite-sized pieces about 1/4 of a finger thick.
Put the shrimp and squid into a bowl, then season with 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1 teaspoon of monosodium glutamate, 1 teaspoon of ground pepper, and let it sit for about 15 minutes for the shrimp and squid to absorb the flavors.

Prepare other ingredients
Wash the green cabbage you bought with water about 2 – 3 times, then use a knife to cut it into pieces about 2 finger lengths long.
Next, put the green cabbage into a pot of boiling water and boil for about 5 minutes on high heat, then remove it and place it in a bowl to soak in cold water for about 10 minutes, then rinse again with water and drain.
Finally, blanch the noodles in a pot of boiling water for about 5 minutes, then remove and drain.

Put 1 tablespoon of cooking oil into the pan over medium heat, wait for the oil to heat up, then add the minced shallots and stir-fry for about 3 – 5 minutes, after that add the greens and stir-fry over high heat for about 4 minutes before transferring to a plate.

Stir-fried noodles with shrimp and squid
Continue by adding 2 tablespoons of cooking oil to the pan where you just sautéed the vegetables and add the noodles, stir-frying for about 2 minutes over high heat. Season the pan with 2 tablespoons of salt, 1 tablespoon of seasoning powder, and stir well.
Then add the sautéed shrimp and squid to the pan and stir-fry for another 3 minutes, then add the green mustard and stir briefly for about 2 minutes, then adjust the seasoning to taste.
Finally, sprinkle an additional 1 teaspoon of ground pepper into the pan, turn off the heat, and serve the dish on a plate to complete.
