  • Fresh octopus has clear eyes, a bright white belly, firm flesh, smooth and shiny skin, and moves quickly and flexibly.
  • Avoid choosing those with cloudy eyes, flesh that is off-white, and mushy.
  • For frozen octopus, choose those with clear eyes, gray-brown color with a hint of green, and the flesh should also be bright white. Specifically, avoid those with swollen bodies as they have been preserved for too long and the taste is less fresh than that of fresh octopus.
  • You can buy octopus at reputable places that specialize in providing fresh octopus or at markets to minimize the risk of choosing those that have been soaked in chemicals or left overnight. You can also ask them to clean it thoroughly, and you just need to wash it before drying. This will be more convenient and save you time!

How to choose fresh scallions

  • You should choose scallions that are of moderate size, with shiny, plump skin that is intact.
  • Good scallions have white skin, bright color, and a slight pungent smell when sniffed.
  • To arrange the dish more attractively, you should choose scallions with clearly pinched stems, with uniform sizes.
  • Avoid buying scallions that are bruised, with soft or mushy skin as they are spoiled.

How to prepare Stir-fried Octopus with Leeks

  • Prepare and marinate the octopus

    You rinse the octopus briefly, then put the octopus into a large bowl with 1 lime, 1 teaspoon of salt, and then massage it to help remove any dirt from the octopus. You turn the octopus over and gently squeeze the round hole to remove the beak.

    After that, you rinse the octopus thoroughly 2 – 3 more times and let it drain.

    When the octopus is drained, you place it in the bowl, season with 2 teaspoons of satay, 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, 1 teaspoon of oyster sauce, then mix well and marinate for 15 – 30 minutes for the octopus to absorb the spices.

    • To eliminate the fishy smell of the octopus, you cut off the eyes, the ink sac, and the internal organs, then rinse several times with clean water.
    • Rub the octopus with a mixture of salt, ginger, or vinegar, then rinse thoroughly with water a few times.

    Remove the roots of the shallots, peel the outer skin, and wash them clean, then let them drain.

    Next, add the shallots and continue to stir-fry over medium heat for another 5 minutes until the shallots are evenly cooked. To prevent the shallots from becoming too soft, do not stir-fry for too long!
