  • Based on expiration date: The expiration date is also printed on the packaging. You should pay close attention to buy mushrooms that are still within the expiration date, it is best to choose mushrooms with the newest production date.
  • Based on shape and color: Enoki mushrooms have a bean-like shape. The cap of the mushroom looks firm, with a white and shiny color. The stem is slightly brown, not slimy, and not crushed. The base of the mushroom should not be separated or crumbling.

  • Prepare the ingredients

    After purchasing the meat, use a knife to slice it into thin pieces, then wash thoroughly and prepare to eliminate the odor.

    For the enoki mushrooms, cut off the dirty roots, tear them into small pieces, and wash them thoroughly. Next, bring a pot of boiling water to blanch the mushrooms, then use chopsticks to remove them and let them drain.

    For the onion and shallots, peel off the skin, wash them, and cut them into small pieces. Chop the green onions and chili into bite-sized pieces.

    • First, clean the pork and soak it in diluted salt water for 10 – 15 minutes. To enhance the odor-eliminating effect, you can add a few smashed ginger slices and a few drops of white wine to the soaking water.
