  • Color: Fresh squid has dark brown spots and its body will be cloudy white like milk.
  • Firmness: Press on the body of the squid; if it’s fresh, the flesh will have high elasticity, and the dent will quickly return to its original state.
  • Observe the squid’s eyes: Fresh squid’s eyes are usually bright and clear, and you can see the iris inside.
  • Squid tentacles: When you flip the squid’s tentacles up, you’ll see the round suction cup ends sticking to the tentacles. If these suction cups are intact, firm, and tightly attached to the tentacles, then it’s fresh squid.

How to choose fresh and delicious clams

  • Choose clams with hard shells that are tightly closed. If you can easily pry them open with your hands, it means the clam is dead and should not be purchased.
  • Or you can touch the clam with your hands; if it moves, it means the clam is still alive.

    First, peel the onion and cut it into wedges. Chop the green onions and mince the garlic.

    Next, remove the shrimp heads, devein them, and peel the shells, then wash them and let them drain.

    Soak the clams in a bowl of diluted saltwater for about 30 minutes to 1 hour to allow them to expel sand and dirt, then wash them clean with water.

    Next, remove the beaks of the squid, the squid heads, and the skin, then wash them clean with water and cut them into bite-sized pieces.

    Then, sprinkle 100gr of mozzarella cheese on top, cover for 1 – 2 minutes until the cheese melts.
