- Do not buy if the shrimp are curled, soft, cloudy in color, or if the legs and head are loosely attached to the body or turning black, as these are signs that the shrimp have been dead for a long time and are not good.
How to choose delicious bean sprouts
- You should choose bean sprouts with long roots, short thin stems, large opened seeds, big yellow or green leaves, milky or light white color, and resilient stems that are hard to break; these are naturally grown bean sprouts that have a sweet taste and do not release water when cooked.
- Do not buy if you see thick, plump stems that are shiny white, with few roots, small and tightly closed seeds, few or no leaves; these are bean sprouts soaked in stimulants, have a bland taste, release a lot of water when cooked, and have no pleasant smell.

How to prepare Stir-fried Shrimp with Chives and Bean Sprouts

Prepare the ingredients
Peel the shrimp, remove the head and the intestinal vein on the back, then wash clean and drain.
Marinate the shrimp with 1 teaspoon of seasoning, mix well and let it sit for about 15 minutes for the shrimp to absorb the flavors.
How to clean the shrimp vein quickly:- The quickest way to remove the shrimp vein is to make a cut on the back of the shrimp, then use the sharp end of a toothpick to pry the vein out and discard it.
- Alternatively, you can bend the shrimp’s head and gently squeeze from the tail to expose the shrimp’s intestinal tract, then hold the intestinal tract and lightly pull to remove the vein.
Discard any damaged bean sprouts and wash them clean. Remove wilted leaves from the chives, wash thoroughly, and cut into small pieces. Peel and slice the shallots thinly.

Stir-fried shrimp with chives
Place a pan on the stove, add 1 tablespoon of cooking oil to the pan and heat it up, then add minced shallots and sauté until fragrant. Next, add the marinated shrimp, turn the heat to high and stir-fry for about 1 minute. After that, add the bean sprouts and stir-fry together.
Season with 1 teaspoon of seasoning powder, 1/4 teaspoon of salt, and 1/2 teaspoon of monosodium glutamate, stir well and quickly for about 2 more minutes.
Finally, taste and adjust the seasoning to your preference, add chopped chives and stir well one more time to finish. Serve the dish on a plate, sprinkle with a little ground pepper for aroma and you can enjoy right away.
