- You should avoid purchasing chayote that has too many grooves on the surface, or has a strong unpleasant smell, as this may indicate it has been treated with excessive chemicals for growth instead of being grown naturally.

- Quality eggs are those with a dark brown shell, looking uniform in color and not too pale, and without any unusual tiny spots on the surface.

Prepare the ingredients
First, with 1 su su that you have bought, use a peeler to peel the skin, then wash it directly under clean running water, drain it, and continue to use a knife to cut it into thin strips or you can use the peeler to create strips as well.
Green onions and coriander should have the roots removed, washed with water to clean off any remaining dirt, drained well, and then chopped finely with a knife. For shallots, just peel them and chop finely.
Finally, crack 1 chicken egg into a bowl along with 1/2 teaspoon of seasoning and 1/2 teaspoon of ground pepper, and use chopsticks to stir well.

Stir-fried Chayote with Eggs
After preparing the ingredients, place a pan on the stove with 1 tablespoon of cooking oil heated over medium heat. When the oil is hot, add 2 finely chopped shallots and sauté until fragrant.
Then, add all the cut chayote, 1/2 teaspoon of seasoning, 1/2 teaspoon of sugar, 1/3 teaspoon of monosodium glutamate, and 3 tablespoons of water, stir well for about 3 minutes.
When the chayote is starting to soften, gradually add the bowl of eggs, quickly stir-fry for about 2 minutes.
When all the ingredients are cooked through, season to taste, sprinkle with chopped green onions and cilantro, then stir well once more, turn off the heat, and serve on a plate to finish.
