Chayote 2 pieces Pig heart 200 gr Pig kidney 200 gr Garlic 4 cloves Shallots 4 bulbs Coriander a little Cooking oil 2 tablespoons Common seasoning a little (salt/ sugar/ seasoning powder/ monosodium glutamate/ ground pepper)

  • Fresh chayote is characterized by having a fresh stem, a shiny skin, not wilting, bruised, or with any signs of insect bites.
  • It is best to choose chayotes that are mostly green, still have a layer of fine hair on the outside, and select those with fewer grooves for easier preparation.
  • Avoid buying chayotes that are too yellow and feel hard when pressed, as these are mature chayotes, which will be tough and bland in taste.

How to choose fresh pig heart

  • Fresh pig hearts are those that have a dark red color, a smooth and shiny surface, and a thin membrane adhering to the heart muscle.
  • It is advisable to choose hearts that have a certain elasticity when pressed with your hand and still have fresh blood, without any leakage.
  • Avoid buying hearts that are darkened, pale, or have clotted blood, and that emit a foul smell, as these are hearts that have been kept for too long or from pigs that died of disease.

How to prepare Stir-fried Su Su with Pig Heart

  • Prepare the pig heart

    First, remove the outer membrane from the pig heart you bought, then cut the heart in half and remove the white membrane inside.

    Next, sprinkle a little salt on the heart and rub it evenly for about 5 minutes, then let it rest for about 2 – 3 minutes and rinse it several times with water, drain and cut into bite-sized pieces.

    For the pig heart you bought, use a knife to cut it in half, then place it in a bowl of salted water, rub and squeeze it vigorously, then rinse it several times with clean water, and finally cut the heart into small pieces.

  • Prepare the other ingredients

    Peel the Su Su, cut it in half, remove the seeds, then wash it thoroughly with water, and cut it into small bite-sized slices.

    Peel the shallots and garlic, then mince them finely. For the green onions and coriander, remove the roots and any wilted leaves, then wash them clean with water and chop them finely.

  • Marinate the heart

    Put a pot of water on the stove, add 1 spoon of salt. When the water boils, add the prepared heart to blanch for about 1 minute on high heat, then remove and rinse briefly with water, drain, and put into a bowl.

    Add to the bowl of boiled heart a mixture of seasonings including: 1 teaspoon of sugar, 1 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of ground pepper. Mix well to combine the ingredients and marinate the mixture for about 15 minutes.

  • Stir-fried chayote with heart and kidney

    Place a pan on the stove, add 1 tablespoon of cooking oil into the pan. When the oil is hot, add minced shallots and sauté until fragrant.

    Then, add the marinated heart and kidney, stir well, then add a little water into the pan, continue to stir-fry the heart and kidney over medium heat for about 5 minutes, then transfer the heart and kidney to a plate.

    Using the same pan that was used to stir-fry the heart and kidney, add another tablespoon of cooking oil. When the oil is hot, add minced garlic and sauté until fragrant.

    When the garlic is golden and fragrant, add the prepared chayote along with a little water into the pan, season with 1 teaspoon of seasoning powder, then stir-fry evenly over medium heat for about 2 minutes before adding the previously stir-fried heart and kidney together, stir-fry until the chayote is cooked, then adjust the seasoning, add chopped herbs, stir briefly, and turn off the heat.
