  • Prefer to choose male ducks over female ducks because male ducks have firmer, thicker, and sweeter meat.
  • Choose ducks with little fat, thick lean meat, and when pressed with your hand, you can feel the meat’s firmness.
  • Avoid choosing ducks with soft, mushy meat, many bruises, and an unusual foul smell.

How to choose fresh pennywort

  • Choose pennywort with small dark green leaves and short stems, with a characteristic smell of pennywort.
  • To buy fresh pennywort, you should go to the market in the morning, as it is freshly harvested and very fresh at that time.
  • Avoid choosing wilted, rotten, or pale-colored pennywort.

How to prepare Stir-Fried Duck Meat with Water Spinach

  • Prepare and marinate the duck meat

    The duck meat, already processed, should be checked for any remaining feathers after purchase. If there are any, proceed to pluck them cleanly and then wash the duck under running water.

    How to clean duck meat without odor

    • Method 1: Use vinegar mixed with salt and apply it evenly on the duck for about 3 – 5 minutes. Then rinse with clean water.
    • Method 2: To eliminate the duck’s odor, you can also replace vinegar with lemon juice mixed with a little salt and proceed as above.

    Next, cut the duck meat into bite-sized pieces and place them in a bowl to marinate with 1/2 tablespoon of minced ginger, 1/2 tablespoon of minced shallots, 1 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, and 1 tablespoon of fish sauce.

    Then mix well and marinate for about 10 minutes to absorb the spices.

  • Prepare the pennywort

    After purchasing pennywort, wash it thoroughly with water several times to remove all the dirt stuck on the leaves, then let it drain.

    Place a pan on the stove, add 2 tablespoons of cooking oil into the pan. Wait for the oil to heat up, then add the marinated goose meat and stir-fry until the meat is firm, then add the pennywort.

    Continue to stir-fry for another 2 – 3 minutes until the pennywort is cooked, then adjust the seasoning to taste.

    Finally, scoop everything onto a plate and it can be enjoyed right away.
