  • Good tofu has a creamy white color; if the tofu is yellowish, it usually contains gypsum, and the yellower it is, the more gypsum it contains.
  • The tofu’s interior should look fluffy, not hard, and the edges should not be too square.
  • Pure tofu has a light, distinctive aroma, while tofu containing gypsum often has a pungent smell of lime.
  • You can buy pre-packaged tofu in supermarkets; for this type, choose boxes with intact packaging, tofu inside should be white, not yellowed, crumbly, or broken.
  • Additionally, for safety and convenience, you can make tofu at home.

  • You should choose celery with bright green leaves, tender and white stalks.
  • Celery should have thick stalks and leaves, with round and uniform stalks, and the bunch should have few roots.

How to prepare Stir-fried Tofu with Celery

  • Prepare the ingredients

    Peel and wash the carrots and cassava. Use a serrated knife to cut them into sticks about 1/2 finger thick.

    Remove the roots and leaves from the celery, keeping only the stalks, peel off excess fibers, wash thoroughly, cut into pieces about 1 finger long, and then split them in half.

    Wash the green onions and chop them finely.

    Use a serrated knife to cut the tofu into sticks about 1/2 finger thick. Marinate the tofu with 1 teaspoon of vegetarian seasoning and 2 teaspoons of soy sauce. Gently shake the bowl with your hands to avoid breaking the tofu.

    Tip: If you don’t have a serrated knife, you can use a regular knife instead.

  • Fry the tofu

    Place a pan with plenty of oil on the stove. When the oil is hot, add the tofu and fry until golden brown on both sides, then remove and drain the oil.

    For the remaining marinade in the bowl, add 1 teaspoon of soy sauce, 1 teaspoon of vegetarian oyster sauce, a little vegetarian seasoning, 1 teaspoon of sugar, and mix the mixture well to season the stir-fry later.

  • Stir-fry the ingredients

    Utilize the pan used to fry the tofu earlier. Add 1 tablespoon of cooking oil and sauté the scallions until fragrant.

    When the scallions are fragrant, lower the heat, add the fried tofu and stir-fry for 1 minute, then add the carrots and marinade, stir for 3 minutes. Next, add the cassava and celery, stir for another 7 – 10 minutes, then turn off the heat and serve the stir-fried dish on a plate.
