- You should choose bunches of water spinach with small tips, looking sturdy as they will be crispier and tastier than those with thick stems. Fresh water spinach will have green leaves without strange spots.
- To check if the water spinach is still fresh, you can try breaking a stem. If a thin sap oozes out when broken, it is fresh. If the stem breaks crisply and the leaves are dark green, you should not choose it as such bunches may have been treated with too much fertilizer.
- You absolutely should not buy if the water spinach has a slightly pungent smell. To ensure safety, you should choose water spinach with a clear origin.

- Clean bean sprouts will have long roots divided into many small branches. In contrast, chemically treated bean sprouts are dark in color, with short and stubby roots.

Prepare the ingredients
First, you pick and discard any damaged, wilted, or yellow leaves of the water spinach, then cut them into pieces about 2 finger joints long.
After you have finished picking the water spinach, rinse it several times with clean water, then lift it out into a basket to drain.
For the bean sprouts, after buying them, wash them thoroughly, then remove any debris and set them aside in a basket to drain.
Next, peel 4 cloves of garlic, wash them, and then use a knife to chop them finely.

Stir-fried Water Spinach and Bean Sprouts
First, you place a non-stick pan on the stove, then add 1 tablespoon of cooking oil, wait for the oil to heat up sufficiently, then start adding garlic to sauté until fragrant.
You stir until the garlic releases its aroma and then add the prepared water spinach to stir-fry over high heat.
You stir-fry until the water spinach is soft, then add 1/2 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of seasoning powder, 1 tablespoon of oyster sauce, and 3 tablespoons of water, then stir well and continue to stir-fry for about 5 minutes.
