Prepare the Water Spinach
When you buy the water spinach, remove any wilted leaves and pests. Then, cut the long stems into pieces about one finger length, wash them thoroughly, and let them drain.

Stir-fried Water Spinach with Fermented Tofu
Heat a pan on the stove and add 2 tablespoons of cooking oil, then heat it over medium heat.
When the oil is hot, add the water spinach and stir-fry for about 2 minutes to coat the vegetables evenly with oil. Add about 4 tablespoons of water and stir-fry for another 3 minutes until the vegetables are cooked.
Then, add 3 tablespoons of fermented tofu along with 1 teaspoon of seasoning powder, 2 teaspoons of vegetarian seasoning, and 1/2 teaspoon of salt, and stir well.
Tip: When adding fermented tofu for cooking, do not include the soaking liquid.Stir evenly for about 3 minutes to let the seasoning soak into the vegetables, then taste and adjust the seasoning again to your liking.
