Make the syrup
Cook the syrup in a 1:1 ratio. Boil until the water is boiling and the sugar is completely dissolved, you can add pandan leaves for a more fragrant syrup.
When the water boils, remove the pandan leaves, add thinly sliced ginger, and cook until the sugar turns a brownish-yellow color, then turn off the heat.

Making Tofu
Soak the soybeans in water for 8 hours, then remove and rinse the beans thoroughly.
Put the beans in a blender, then add enough water to cover the beans and blend until smooth. It is advisable to blend in multiple batches to ensure the beans are finely ground and to protect the blender from overloading.
After blending the beans, use a strainer and a clean cloth to filter out the soybean pulp.
Pour the freshly filtered soy milk into a pot with a few pandan leaves, then place it on the stove over medium heat. Be sure to stir constantly to prevent the milk from burning at the bottom of the pot. Cook until the milk boils.

Completion
Dissolve 10 g of gelatin in 60 ml of warm water.
Add the gelatin mixture to the hot soy milk. Stir well to combine, then wait for it to cool down completely before placing it in the refrigerator.
After 4 – 6 hours, the soy milk will have set into tofu. Scoop it into a bowl and pour in the cooled syrup to enjoy. This dish must be eaten cold, as hot syrup cannot be used since the gelatin will melt at high temperatures.
