How to choose fresh ingredients
How to choose fresh and proper water spinach
- You should choose a bunch of water spinach that has a bright green color, do not choose spinach with many yellowed or dark green leaves as they are too old and will not be tender and sweet like fresh greens.
- You should choose bunches of spinach with sturdy and crisp stems; when you press them with your hand, if you can easily break them, they are fresh water spinach.
- You should not choose overly large or thick bunches of spinach as they may have been treated with chemicals to look more appealing.
- Do not choose bunches of spinach that are bruised or have soft, wilted stems as they are usually older and wilted, no longer fresh and tasty.
How to choose fresh quality shrimp
- You should choose live shrimp, with a bright body and transparent shell, and a slightly curled tail, which indicates fresh and delicious shrimp.
- Avoid choosing shrimp that are cloudy or too pale, with spread tails, soft and mushy bodies when touched, and a bad smell, as these indicate shrimp that have been stored for too long and are no longer fresh.
- If you notice that the shrimp’s belly is unusually swollen, the body is completely straight, and there is liquid seeping from the segments, do not choose these as they may have been injected with impurities.
How to cook Water Spinach Soup with Shrimp
-
Prepare the ingredients
250g of fresh shrimp, after buying, wash several times with water to remove all sand, then transfer to a bowl, marinate with 1/2 teaspoon of salt, and mix well.
Peel the shallots, and use a knife to slice them thinly. For the water spinach, remove the old stems, discard the yellow leaves, and wash 2 – 3 times with clean water to remove dirt, then drain in a basket.
-
Cooking the soup
You place a pot on the stove, add 1 tablespoon of cooking oil, and wait for the oil to heat up before adding finely chopped shallots to sauté until fragrant.
Next, you add fresh shrimp and stir well, seasoning with 1 tablespoon of fish sauce to let the shrimp absorb the flavors. Stir-fry for about 3-5 minutes until the shrimp is slightly firm, then add water to halfway up the pot and bring to a boil.
Once the water boils, add the water spinach, using chopsticks to stir a few times to ensure the vegetables cook evenly. Wait for the water to boil again and the vegetables to become tender, then turn off the stove, seasoning with an additional 1/2 teaspoon of seasoning powder and 1/2 teaspoon of monosodium glutamate to finish.
