How to choose delicious grapefruit, thin skin, many segments

  • To choose juicy grapefruit, you need to observe if the outer skin is taut, shiny, slightly yellowish, the shape of the grapefruit is round and even, and when held in hand, it feels heavy and firm, then the grapefruit is good, juicy, not dry and fibrous inside.
  • To check whether the grapefruit skin is thick or thin, you can gently tap the skin with your fingertip. If you hear a ‘pop pop’ sound, then that grapefruit has thick skin, while if you hear a ‘click click’ sound, the skin is thin, so you should buy it.
  • The thorny bumps on the skin of the grapefruit: the larger the thorns, the riper, older, and tastier the grapefruit is. Do not choose grapefruits with small thorn bumps and dense thorns, as these are usually immature and taste very sour, not sweet.
  • For green skin grapefruit, especially Nam Roi grapefruit, you should choose fruits weighing around 1 kg or more, when held, it feels firm and the size of the grapefruit is not too large, the skin is taut and shiny, green with a golden hue, and has large thorns.

How to make Grapefruit cooked with rock sugar and honey

  • Prepare grapefruit

    First, you need to peel off the white skin on the outside of the grapefruit, separate each segment, and use scissors to cut the end of each grapefruit segment. Clean the thin white skin wrapping around the grapefruit segment, while removing all the white string inside the grapefruit segment and only keeping the grapefruit flesh. You need to do this step carefully if you don’t want the final product to be bitter.

    The lump rock sugar you take out should be crushed finely so that the sugar dissolves easily when cooked and blends better with the grapefruit. You can also choose to buy pre-crushed rock sugar.

    Continue to add the grapefruit and rock sugar into the pot to prepare for cooking: one layer of grapefruit corresponds to one layer of rock sugar on top.

    Let the rock sugar and grapefruit marinate for about 5 – 6 hours until the sugar has completely dissolved.

    Note: Only let the rock sugar and grapefruit marinate outside, do not put them in the refrigerator as the sugar will not dissolve.

    Add 10 grams of salt to this dissolved sugar mixture; the salt helps to balance the flavors better.

    Put the marinated grapefruit and rock sugar on the stove, at first, set the heat to high to bring the mixture to a quick boil, then reduce the heat and let it simmer for about 45 minutes to 1 hour.

    After about 10 minutes of cooking, add 30 ml of lemon juice to the pot to create a refreshing flavor. Let the mixture simmer on low heat for another 30 minutes; at this point, the grapefruit and rock sugar will gradually change to an orange color and darken to a beautiful reddish-brown.

    Note: You should not leave the mixture on the stove longer than this time as it will cause the grapefruit and rock sugar to become too sticky and hard like candy; therefore, you should turn off the heat when it reaches a moderately sticky and thick consistency.

    You need to prepare a clean glass jar to hold and preserve the candied pomelo with rock sugar and honey. Pour the hot mixture of pomelo and rock sugar into the glass jar.

    After this mixture has cooled, pour 200 ml of honey on top and mix the mixture well to finish.

    Note: Only add honey when the pomelo and rock sugar have cooled, avoid adding honey directly while the pomelo and rock sugar are still cooking on the stove as this causes the honey to lose its nutrients and the fragrance of the honey.
