Green beans with skin 150 gr Rock sugar 100 gr Tapioca starch 1 tablespoon Filtered water 800 ml
How to choose good green beans for sweet soup
- You should choose green beans that are bright green in color, firm, free from pests, and have the characteristic aroma of green beans.
- If you buy green beans with skins, choose those that are plump, uniform, green inside, and not infested or shriveled.
- Good green beans have a white spot on the belly, are moderately expanded, and are not black or shriveled.
How to make Green Bean Sweet Soup

Wash the green beans
First, you take 150g of green beans with the skin and wash them with water 3 – 4 times to remove the husks and any broken beans. Then, you will put the beans in a pot and pour boiling water over them until they are submerged.
Note: To keep the beans intact while cooking, do not soak them; just wash and rinse them! -
Cook the green beans with rock sugar
Next, you place a pot of beans on the stove and simmer on medium-low heat for 10 minutes. When the water has reduced, continue to pour in about 200ml of water and keep cooking.
After about 10 minutes, add another 200ml of water to the pot of beans and cook until the beans are tender and the layer on top begins to crack slightly.
Next, add 100g of rock sugar and 2 cups of filtered water (about 300ml) into another pot and simmer until the sugar completely dissolves.
Then, you will pour the dissolved sugar water into the pot of green beans and mix 1 tablespoon of tapioca starch with 100ml of filtered water and pour it into the sweet soup, to thicken the mixture, continue to simmer for 2 – 3 minutes, then turn off the heat.
Note: While cooking the beans, stir gently and in one direction to minimize the beans breaking! -
Final product
You scoop the mung bean dessert into a bowl and add a few ice cubes to enjoy it, and it’s perfect.
The beans are cooked tender but still retain their shape, not mushy. The dessert is fragrant, with a moderate sweetness, refreshing, very suitable for cooling off in the summer.
