Cut the sweet potatoes and pumpkin
Cut the top off the pumpkin, peel it, remove the seeds, and wash it again with water, then cut into bite-sized pieces about the length of a finger. Peel the purple sweet potatoes, wash them clean, and then cut them into bite-sized pieces.
Peel the taro, wash it clean with water, and then cut the taro into bite-sized pieces.

Steam the sweet potatoes and pumpkin
Add 1 liter of water to the pot, place the steamer in the pot, cover it, then place the pot on the stove, turn on medium heat to steam the sweet potatoes for about 15 – 20 minutes until the sweet potatoes, taro, and pumpkin are cooked.
Turn off the stove, take the steamer out and let it cool slightly.
Tip: Check if the sweet potatoes are soft by inserting chopsticks into them; if they feel soft, they are done. -
Mixing potato dough
Place sweet potatoes, pumpkin, and taro into 3 separate bowls and mash them with a spoon.
Gradually add 4 tablespoons of tapioca flour to each bowl, and mix by hand until it forms a smooth, cohesive dough.

Cutting to form dessert balls
Use plastic wrap to cover the cutting board. Take small portions of dough and roll them on the board.
Then take a piece of taro, a piece of sweet potato, and a piece of pumpkin, press them tightly together, and roll them on the board until they are nicely shaped.
Continue this process until all the dough is used. Then use a knife to cut the balls into bite-sized pieces, about 1.5 finger lengths.

Cook sweet potato dessert
Place a pot on the stove, turn on medium heat, add 1 liter of water and bring to a boil. When the water boils, drop the sweet potato balls in and boil for about 10 minutes until the balls become translucent and float.
While waiting for the sweet potato balls to cook, pour 1 liter of coconut milk into another pot, place it on the stove, and turn on medium heat to bring the coconut milk to a boil.
Then add 200g of sugar, 1/3 teaspoon of salt, and 1 bundle of pandan leaves, stirring gently to dissolve the sugar.
When the sweet potato balls are translucent and floating, transfer them to the pot of coconut milk and cook for an additional 5 minutes before turning off the heat.
