How to choose fresh pumpkin
- A good pumpkin usually has a yellow-orange color with dark green patches, yellow flesh, and a sweet, fragrant taste with a relatively sticky texture. When holding the pumpkin, if the skin feels smooth and it feels heavy, it’s a good pumpkin, dense and has few seeds.
- Choose pumpkins with a stem length of 2 – 5 cm. Pumpkins without stems tend to rot faster.
- Do not buy if pressing the skin feels soft because this indicates an immature pumpkin, and check carefully to avoid buying damaged or rotten fruits.

- Canned coconut milk can be purchased at food stores, supermarkets, markets,… or online at reputable e-commerce sites like TasteVN.

How to make Pumpkin dessert with coconut milk

Prepare and steam the pumpkin
Peel the pumpkin, remove the seeds, and wash it 2 – 3 times with water for cleanliness, then cut the pumpkin into small pieces and let it drain.
Next, place the pumpkin in the steamer for about 20 minutes from when the water boils, until the pumpkin is soft, then transfer it to a bowl and mash with a fork.

Shape and boil pumpkin chè balls
Add 5 tablespoons of glutinous rice flour into the bowl of mashed pumpkin, mix the pumpkin and glutinous rice flour together and roll into bite-sized balls.
Boil a pot of water, add the glutinous rice balls and boil for about 5 – 7 minutes on medium heat until the balls become translucent. Remove the balls and immediately place them in a bowl of cold water to soak for about 30 seconds before taking them out.

Cook the pumpkin chè
Boil 700ml of water, add 1/2 cup of sugar (rice bowl), boil until the water returns to a boil, then add the boiled pumpkin balls, lower the heat and cook for about 7 more minutes, adjust the amount of sugar to taste and turn off the heat.

Cook coconut milk
Add coconut milk into a pot along with 1 tablespoon of sugar, 1/3 teaspoon of salt, and stir well.
Put the pot on the stove, stirring continuously until the mixture is about to boil, then dissolve 1 tablespoon of tapioca starch (can replace tapioca starch with glutinous rice flour, cornstarch,…) with 50ml of water and then add it to the coconut milk pot, stirring continuously until the water boils again, then turn off the heat.

Scoop the pumpkin dessert into a bowl, add a little coconut milk, and it is ready to enjoy.
