How to Choose Good Pork Fat
- Choose fat that is opaque white, has good elasticity, the skin is tight and not discolored.
- You should buy the pork neck fat so that when cooked, the fat will become crispy and the rendered fat will be richer and more aromatic.
- To buy the best quality fat while ensuring hygiene and safety, you should buy at reputable stores, food stalls, supermarkets, or major markets with inspection stamps.
- Do not buy fat that shows signs of being soaked in chemicals, leaking fluid, or having an unpleasant odor.
How to prepare Fried Pork Fat with Garlic and Chili Sauce

Prepare the pork fat
When buying pork fat, to reduce the unpleasant smell, rub it briefly with a little salt and then rinse it clean with water.
Place a pan on the stove with about 100 ml of water, bring it to a boil, and then add the pork fat to blanch for about 5 minutes until the fat firms up, then remove it and let it drain well.
After blanching and draining, cut the fat into square pieces about the thickness of 2 finger joints.
Tip:
- Cut the pork fat into larger pieces so that when frying, the pieces will shrink to a suitable size and not burn.
- To minimize oil splatter, make sure the fat is completely drained before further cooking.

Fry the pork fat
Place a pan on the stove, add the cut fat, and stir continuously over medium heat. When the fat has released all its oil, fry for about another minute until golden and crispy, then remove to paper towels to absorb excess oil.
Note:- Be careful when frying pork fat as the oil can splatter and cause burns!
- For cast iron or stainless steel pans, the fat may stick to the bottom of the pan in the initial stage. Allow the fat to fry on its own for about 1 minute until one side is golden and crispy, then stir gently to avoid breaking apart.

Fry the pork fat
In the same pan where you have rendered the fat, reduce the amount of fat left to just 1 tablespoon, then sauté the minced garlic until fragrant.
When the garlic is golden and aromatic, add 2 tablespoons of sugar and 2 tablespoons of fish sauce, stirring on low heat until the sugar dissolves. Then, add the minced chili, stir well, and add the rendered pork fat, mixing thoroughly so that the sauce coats the pork fat evenly.
Fry for about 1 minute, then turn off the heat and plate it.
