Prepare the ingredients
Rinse the red beans thoroughly, picking out any moldy or defective beans that float on the surface. Then soak the beans in hot water for quicker softness or soak them in clean water overnight for 8 – 10 hours.
Peel the ginger, wash it clean, and then slice it thinly.

Simmer the red beans
Boil a pot of water and then add the beans along with 2 teaspoons of sugar, reducing the heat to a low simmer.
Simmer the beans for about 15 minutes, then turn off the stove and let the beans cook in the pot by residual heat. After 15 minutes, check the beans. If they are soft, do not cook further; if they are still hard, place them back on the stove over low heat.

Prepare the tapioca pearls
First, boil a pot of water. When the water is boiling, reduce the heat and drop the tapioca pearls in. Use chopsticks to gently stir so that the pearls do not stick together. Then, cover the pot and boil on high heat until the tapioca pearls float to the surface of the water.
Prepare a bowl of filtered water mixed with 2 teaspoons of sugar. Immediately transfer the tapioca pearls from the hot water into the bowl of sugar water you prepared, stirring well so that the pearls soak up the sugar water and do not stick together as they cool.

Prepare ginger syrup
Boil a pot of water, then add 3 teaspoons of apricot blossom sugar and 3 pieces of palm sugar, simmer on low heat, stirring continuously until the sugar dissolves.
After the syrup boils again, add all the ginger, and continue to boil for 5 minutes before turning off the heat.

Making Tofu

Prepare a clean large bowl and a bowl with warm water. To set the tofu, we will place the bowl containing the tofu in the warm water.
Note: The setting mechanism of grape sugar requires high temperature, so be sure to soak the bowl in warm water!
Next, you add 2 grams of grape sugar and 2 tablespoons of purified water to the bowl. Quickly sprinkle the grape sugar evenly around the bowl, while pouring the hot soy milk in quickly. This step will help the soy milk mix evenly with the grape sugar.
Then, use a spoon to skim off the foam, cover it with a cloth to prevent condensation, and use a lid to cover it, keeping the bowl in a fixed position without moving. This step needs to be done quickly because grape sugar can sour very quickly when exposed to air.
