Steamed taro 250 grams Steamed sweet potato 350 grams Vegetarian short ribs 50 grams Fresh lemongrass 300 grams Salt 1/2 teaspoon Sugar 1/2 teaspoon Pepper 1/2 teaspoon Tapioca starch 25 grams Chili sauce 2 tablespoons Tomato sauce 4 tablespoons

  • You should choose taro roots that are round and egg-shaped. The outer skin is rough, with many spots and dirt still clinging to the skin.
  • Good taro roots that are not fibrous and have a strong aroma will feel light when held in your hand.
  • You should prioritize choosing roots with many indentations. The inner flesh has many purple veins and a deep red color.

How to choose fresh sweet potatoes

  • Good sweet potatoes that are not fibrous usually have a round or elongated shape, with an intact exterior, not cracked or chipped.
  • When holding sweet potatoes, you will feel their weight. Avoid choosing sweet potatoes that are black or have blemishes, as these are signs that the potatoes are spoiled.

How to prepare Potato Spring Rolls

  • Steam the potatoes

    Taro and sweet potatoes should be peeled, washed clean with water. After that, cut the potatoes into small pieces and steam them for about 20 minutes until they are soft.

    Next, put the steamed potatoes in a sieve to mash them finely and place them in a bowl.

  • Prepare the ingredients

    Fresh lemongrass should be washed clean and the outer layer removed, then crush the stems and cut off the tops to have lemongrass pieces about a hand’s length.

    Bean curd skin should be washed clean with water and then squeezed to remove excess water.

    Vegetarian ribs should be rinsed to remove all flour residue, then soaked in cold water for 30 minutes before cutting into thin strips.

  • Sweet Potato Filling

    You steam the taro and sweet potato until cooked, then mix with the vegetarian spare ribs in a bowl, and season with 1/2 teaspoon of salt, 1/2 teaspoon of sugar, 1/2 teaspoon of pepper, and 25 grams of tapioca flour.

  • Wrapping with Lemongrass

    You take the lemongrass stalk and use a portion of the sweet potato filling to wrap and roll it around the lemongrass.

    Next, you place a piece of tofu skin (fu trúc) on the cutting board, put the sweet potato wrapped lemongrass on top, and roll the tofu skin around it.

    Finally, use plastic wrap to cover it.

    You place the sweet potato roll into a steamer and steam for about 10 minutes until the ingredients are cooked.

    Once cooked, you remove the plastic wrap from the sweet potato roll.

    Put a pan of oil on the stove, set to low heat, wait for the oil to heat up, then fry the sweet potato roll until golden.

    You mix 4 tablespoons of ketchup, 2 tablespoons of chili sauce and stir to make a dipping sauce.

    Use a brush to evenly coat the sauce around the sweet potato roll, then turn them over and continue frying until fully cooked and golden, then turn off the heat.
