Pork rib tips 200 gr Pineapple 1/4 fruit Tomato 1 fruit Chicken thigh mushrooms 150 gr (3 mushrooms) Basil 20 gr (2 sprigs) Shallots 2 bulbs Garlic 3 cloves Soy sauce 1 teaspoon Oyster sauce 1 tablespoon Cooking oil 1 tablespoon Common seasoning a little (salt/ sugar/ seasoning powder/ pepper/ monosodium glutamate)

  • Pork cartilage is the cartilaginous part at the end of the ribs, this cartilage is very soft with meat surrounding it, making it crispy and chewy when eaten, very delicious.
  • When buying pork cartilage, you should choose those with firm meat around, good elasticity, and no leakage of fluid or mushiness.
  • Do not buy cartilage that has a pale pink color gradually turning green, stored for a long time in the freezer, and without a clear origin.

    Chicken thigh mushrooms should be soaked in diluted salt water for about 3 minutes. After that, remove and rinse with clean water, then cut diagonally into thin, long pieces for easy eating.

    Pineapple should be peeled, washed, and cored, then cut into fan shapes; after that, take 2 pieces of pineapple and chop finely to marinate the ribs.

    Thai basil should be picked, washed, and chopped. Shallots and garlic should be peeled and minced.

  • Prepare and Marinate the Pork Ribs

    To eliminate the unpleasant odor from the pork ribs, you can scrub them with salt until the salt dissolves completely, then rinse several times with water.

    Next, use a knife to cut the ribs into bite-sized pieces and place them in a bowl to marinate for about 20 minutes with minced pineapple, half of the minced onion and garlic, half a teaspoon of MSG, half a teaspoon of sugar, two teaspoons of seasoning powder, one teaspoon of soy sauce, and one-third teaspoon of pepper.

    Mix well to ensure the ribs are coated and absorb the seasoning.

  • Stir-fried ribs with tomatoes and pineapple

    Add 1 tablespoon of cooking oil and the remaining 1/2 portion of minced garlic and onion into the pan, sauté until fragrant, then add the marinated ribs.

    Stir-fry on medium heat for about 2 minutes until the ribs are just cooked, then add 1 tablespoon of oyster sauce, 1/2 teaspoon of seasoning, and add in the chicken thigh mushrooms.

    Stir-fry for another 2 minutes until the mushrooms are just cooked, then add all the tomatoes and pineapple into the pan with the ribs and stir evenly for about 1 minute until the tomatoes and pineapple are cooked.

    Finally, sprinkle basil on top and adjust the seasoning to taste, then turn off the heat.
