How to choose fresh ingredients
How to choose delicious and safe jackfruit
- Young, unripe jackfruits usually have a green outer skin, sharp spikes, and the distance between the spikes seems close together.
- Choose jackfruits with a fresh-looking stem that is not wilted. At the same time, when cut open, the flesh of the jackfruit should have a lot of white fibers, be soft, and have a small core.
- Unripe jackfruit has a light fragrance, unlike the distinct aroma of ripe jackfruit.
How to choose fresh carrots
- Good carrots will have a bright orange color; choose those with a moderate size because if they are too large, they are old carrots, and if too small (except for mini carrots), they are still young and lack the characteristic flavor.
- Observe the green tops of the carrots; the greener the tops, the fresher the carrots as they have just been harvested; otherwise, they are older and less sweet.
- Do not buy carrots that feel a bit soft when pressed; these are withered carrots, and they will not taste good when cooked.

Prepare the jackfruit
When you buy young jackfruit, peel off the outer skin. Next, use a knife to cut the jackfruit into thin slices suitable for eating and soak all of it in a mixture of 1 liter of water mixed with 1 tablespoon of salt and 1 cup of vinegar.
Soak the jackfruit for 30 minutes. Then rinse it with water several times until clean and let it drain.
How to prepare jackfruit without sticky sap
- First, peel off the jackfruit skin and then rub cooking oil on the knife, after that, proceed to cut the jackfruit in half and then into quarters.
- Next, prepare a bowl of saltwater with the juice of 1 lemon and soak the jackfruit for 20 minutes or longer until you touch it and do not feel the sap sticking to your hands.
- Finally, rinse the jackfruit under cold running water, let it drain completely, and it is ready for cooking.
-

Peel the carrot, wash it clean, let it drain, and then cut it into strips. Wash the chives with water, let them drain, and cut them into pieces about 2 finger lengths long.
Peel the shallots and garlic, then slice them thinly. Wash the chili and chop it finely.
Wash the ginger with water and then peel off the skin. After that, use a knife to cut the ginger into small strips.

Mix the ingredients
Add young jackfruit, carrots, chives, shallots, garlic, chili, and ginger into a large bowl and mix well to combine all the ingredients.

Prepare vinegar and sugar mixture and soak the jackfruit
In a new bowl, add 1 cup of sugar, 1 cup of vinegar, 600ml of water, and 1 tablespoon of salt, then stir well until the sugar and salt are completely dissolved.
Put all the mixed jackfruit from above into a glass jar. Then, gradually pour the vinegar and sugar mixture into the jar until full. Finally, cover the jar and let it sit for about 5 – 7 hours before it can be used.
