How to prepare pickled young jackfruit

  • Prepare the jackfruit

    When you buy young jackfruit, peel off the outer skin. Next, use a knife to cut the jackfruit into thin slices suitable for eating and soak all of it in a mixture of 1 liter of water mixed with 1 tablespoon of salt and 1 cup of vinegar.

    Soak the jackfruit for 30 minutes. Then rinse it with water several times until clean and let it drain.

    • First, peel off the jackfruit skin and then rub cooking oil on the knife, after that, proceed to cut the jackfruit in half and then into quarters.
    • Next, prepare a bowl of saltwater with the juice of 1 lemon and soak the jackfruit for 20 minutes or longer until you touch it and do not feel the sap sticking to your hands.
    • Finally, rinse the jackfruit under cold running water, let it drain completely, and it is ready for cooking.

    In a new bowl, add 1 cup of sugar, 1 cup of vinegar, 600ml of water, and 1 tablespoon of salt, then stir well until the sugar and salt are completely dissolved.

    Put all the mixed jackfruit from above into a glass jar. Then, gradually pour the vinegar and sugar mixture into the jar until full. Finally, cover the jar and let it sit for about 5 – 7 hours before it can be used.
