- Choose fresh, firm, plump tamarind of uniform size; do not buy tamarind that is shriveled, infested, or hard to peel.
How to Make Dried Tamarind Jam

Prepare Tamarind
First, when you buy tamarind, wash it briefly with water, then place it in a basket to drain.
Next, put the tamarind in a box and seal it tightly, then place it in the freezer refrigerator for 1 day (or until the tamarind is completely frozen).
Tip: If you have time, you should soak the tamarind in salt water before peeling and not freeze it. Soaking in salt water will make peeling easier, and the tamarind jam will be more chewy and delicious. -
Process Tamarind
After the tamarind has frozen, take it out and thaw for about 2 hours, then peel off the outer skin. Next, soak the peeled tamarind in 3 liters of water and 1 teaspoon of salt for 30 minutes.
After 30 minutes, take the tamarind out and use a knife to cut the tamarind in half and remove the seeds. Then soak the seedless tamarind in diluted salt water for another 30 minutes, then remove and rinse with water.

You put a pan on the stove, then add the marinating water of the tamarind to boil over heat. When the pan starts to heat up, add the marinated tamarind and cook on low heat for about 10 minutes.
