Peanuts 150 gr Salt 100 gr Green onion 1 stalk (chopped) Chili pepper 1 piece (chopped) Chili powder 1 teaspoon Cooking oil 1 tablespoon Vegetarian fish sauce 3 tablespoons Sugar 2 tablespoons

How to choose good, flavorful peanuts

  • Choose peanuts that are large, round, with a bright outer shell, and feel firm and plump when pressed with your fingers.
  • The peanuts should be uniform, without being mixed with shriveled, rotten, or weevil-infested ones.
  • Avoid peanuts that have strange odors or unusual marks on them.

How to make Vegetarian Caramelized Peanuts

  • Roast peanuts with salt

    Put 150g of peanuts and 100g of salt into a pan and start roasting the peanuts with salt over medium heat. Roast until you see the salt in the pan dry, the peanut shells turn red, and the peanuts change to a yellow color, then turn off the heat.

    After that, strain everything through a strainer to remove the salt and keep the peanuts.

  • Make garlic chili sauce

    Heat a pan on the stove and add 1 tablespoon of cooking oil. Wait for the oil to heat up, then add 1 tablespoon of minced shallots and minced chili to sauté until fragrant.

    Then, turn off the heat, add 1 teaspoon of chili powder, 3 tablespoons of vegetarian fish sauce, and 2 tablespoons of sugar to the pan, then turn the heat back on to low, cooking until this fish sauce and sugar mixture blends together.

  • Caramelize peanuts with sweet sauce

    When the mixture of fish sauce and sugar in the pan boils, add the roasted peanuts and increase the heat, stirring constantly so that the seasoning can easily penetrate the peanuts.

    Continue to caramelize the peanuts until the fish sauce and sugar mixture thickens and coats the peanuts evenly, then turn off the heat and let it cool.

    Finally, put the caramelized peanuts into a jar, seal tightly, and they can be used for about a week.
