  • Prepare the ingredients and briefly blanch the pickled vegetables

    Peel the garlic and chop it finely. Wash the chili, remove the stem; chop the bell pepper finely, and leave the small chili whole.

    Pick the old stems and wilted leaves from the Vietnamese coriander, wash it clean, and let it drain.

    Pour hot water at about 60 – 70 degrees into a bowl, briefly blanch the pickled vegetables in the water, then let them drain and slice them thinly for eating.

    Tip: Do not blanch in water that is too hot, as the pickled vegetables will become soft and lose their crunchiness.

    Place a pot with about 500ml of water on the stove, bring the water to a boil over medium heat, then add the prepared meat to boil.

    After boiling, skim off the dirty foam that floats to the surface, reduce the heat to low and add 1 tablespoon of vinegar, then continue boiling for an additional 10 – 15 minutes until the meat is cooked.

    Finally, remove the meat and soak it in a bowl of ice water for 3 – 5 minutes to cool, then cut it into thin, bite-sized pieces.

  • Mix pickled melon and pork

    You put the pickled melon in a bowl, squeeze the juice from 1/2 a lemon into the bowl, add the minced garlic, chopped chili, whole chili, 1.5 spoons of sugar, and mix well for the spices to blend.

    Then you add the pork belly, continue to mix well, season to taste, and then add the Vietnamese coriander to finish!
