Prepare the ingredients and briefly blanch the pickled vegetables
Peel the garlic and chop it finely. Wash the chili, remove the stem; chop the bell pepper finely, and leave the small chili whole.
Pick the old stems and wilted leaves from the Vietnamese coriander, wash it clean, and let it drain.
Pour hot water at about 60 – 70 degrees into a bowl, briefly blanch the pickled vegetables in the water, then let them drain and slice them thinly for eating.
Tip: Do not blanch in water that is too hot, as the pickled vegetables will become soft and lose their crunchiness. -
Prepare and boil the meat
After purchasing the pork, to eliminate the odor, you should rub a bit of salt directly onto the meat, then rinse thoroughly with clean water and let it drain.
Tips to prepare pork without odor- Method 1: Massage the meat with salt (or lemon juice, vinegar) for about 2 – 3 minutes, then rinse under running water until clean.
- Method 2: Soak the meat in diluted white wine for about 5 – 10 minutes, then take it out and rinse 2 – 3 times with water.
- Method 3: Boil a pot of water, then briefly blanch the meat for about 2 minutes, after which you remove it and rinse off all impurities before cooking.

Place a pot with about 500ml of water on the stove, bring the water to a boil over medium heat, then add the prepared meat to boil.
After boiling, skim off the dirty foam that floats to the surface, reduce the heat to low and add 1 tablespoon of vinegar, then continue boiling for an additional 10 – 15 minutes until the meat is cooked.
Finally, remove the meat and soak it in a bowl of ice water for 3 – 5 minutes to cool, then cut it into thin, bite-sized pieces.
